On tonight’s episode of the Coronavirus Cooking Diaries, I just want you to know that I get by with a little help from my friends. I have been craving fish and not going to the supermarket everyday or to a good fish purveyor has been troublesome. Enter @pierlessfishbk and my good friend Camille aka @cheftomarket who accidentally ordered too much salmon. I was happy to take some off of her hands and it was absolutely delicious. I pulled out my @korinknives chef knife and went to town. I sliced it thin but next time I will try my luck with thicker rectangular cuts. The fish was very fresh, high quality and delicious! They do home deliveries and have a variety of fresh and frozen seafood. I will be ordering from them soon because I love fish and I need more fresh fish in my diet. Especially with all the baking 😂. By the way, if anyone has any good salmon recipes they want to share please do. Typically I prefer salmon raw or smoked and like it sushi/sashimi/tartare style, but I am looking for new things to try so please send me your favorites! On today’s episode of the Coronavirus Cooking Diaries let’s talk about Branzino. Branzino is a mild white fish that gained popularity in Italian cuisine and cooking. Most often you will find it roasted whole but I picked up some nice filets and decided to cook them up. Branzino is also often referred to as European bass and provides a sweet tasting, flaky white meat. It is both fished and raised commercially, and is considered to be the most important fish currently cultured in the Mediterranean. I did a very simple preparation of the Branzino with some salt pepper and a quick fry in a pan with butter and oil for a couple minutes skin side down and about 45 seconds more on the meat side. A slash of lemon juice finished it off. I served it with some of the burst tomato sauce I made the night before. I also made some homemade French Fries for a little fish and chips action. NYC is now open and we are beginning Phase 1 of the reopening process. Just because NYC is slowly coming back to life that doesn’t mean it’s time to lose our minds just yet. We have a long way to go before we are out of the woods. We still have the much needed protests fighting for #blacklivesmatter and my posts will continue to feature regular life and the struggle for change. Life is a balance and so is my feed. To celebrate The reopening of NYC and lifting of the curfew, I am going to post some pictures from a delicious seafood feast I made over a week ago. On today’s episode of the Coronavirus Cooking Diaries I decided to make scallop crudo from left over scallops from a day before and also cook a beautiful halibut filet. The crudo was excellent and had OJ, olive oil, lemon juice, ginger, soy sauce, sherry vinegar and hot sauce. It was delicious and going the recipe @epicurious thank you! The halibut was covered in mayo, butter, garlic, lemon, Pecorino Romano, hot sauce and green onions. It was supposed to cook in the broiler but the oven broke and stopped working a quarter way through cooking so I finished it in a pan on the stove top. I served it with the left over potatoes and burst tomato tapanade that I made with the Dorade. It paired perfectly and so did a bottle of @vracwine rose from @villagewineimports crisp, dry, light, refreshing and delicious! Thank you again @pierlessfishbk for delivering some incredible seafood! It’s hot, it’s muggy, it’s starting to get warm and I feel like eating lighter fare. It’s the perfect time for fish and seafood. On today’s episode of the Coronavirus Cooking Diaries I give you the humble Dorade or Sea Bream. Dorade or otherwise known as Bream, Gilt Headed (Dorade), Gilt Headed Bream, and/or Sea Bream are found in the coastal waters of the Mediterranean, Atlantic and off the coasts of Australia and New Zealand. The Bream has a large head, a silver oval body and a rounded body. It is a light form white fish that you can cook in many different ways. It is quite delicious and has been popular with NYC chefs for over 20 years. I decided to cook the Dorade With Potatoes and Burst Tomato Sauce recipe and you sed the recipe from @epicurious and I didn’t have all the ingredients so I got a bit creative. The Dorade cooks skin side up on a bed of boiled potatoes. Once the fish is cooked you pull it out and continue roasting the potatoes that are tossed in olive oil, butter, garlic, salt, pepper, thin sliced lemon, bay leaves and white wine. The Dorade is served with a burst tomato sauce where you roast cherry tomatoes and add capers, minced garlic, mint, olive oil, reconstituted craisins (instead of golden raisins) lemon juice, oregano balsamic vinegar (instead of red wine vinegar) and crushed red pepper. I don’t have pine nuts, it didn’t need it. The fish was cooked perfectly and was delicious but next time I might quick pan fry it to crisp the skin then bake it.
