Peter Mum's Soda Bread Recipe

With work around here the way it is at the moment, most likely EuropeanCuisines.com won't be up again until the end of the year. (shrug) Such is life.
With that in mind, here per @the-book-of-night-with-moon 's request is the famous soda bread recipe that brought people to the site again and again for a couple of decades. If the recipe below seems very plain, that's because the way soda bread is done in North America and elsewhere in the world is not how everyday soda bread's made in Ireland. No fruit, no sugar—except for an optional spoonful if the baker likes it: I omit it—no nuts or other similar addenda: nothing but flour, salt, soda and (ideally) buttermilk. (Breads here that do have fruit and whatnot are referred to as "tea breads" or "fruit soda".)
The ingredients:
450 g / 1 lb / approximately 3 1/4 cups flour (either cake flour or all-purpose)
Optional: 1 teaspoon sugar
1 teaspoon salt
1 teaspoon bicarbonate of soda
Between 300-350 ml / approx 10-12 fluid ounces buttermilk, sour / soured milk, or plain ("sweet") milk, to mix
If you're using plain milk, add 1 teaspoon of baking powder to the dry ingredients. This is perfectly legit; lots of professional bakers in Ireland do their soda bread this way, without the buttermilk and with additional raising ingredients besides baking soda.
So: preheat your oven to 200C / 400F. Meanwhile, mix the dry ingredients together well in a good-sized bowl, and then add the liquid and mix everything together. Like this:

That raggedy texture you see in the middle of the video is exactly what you want, and part of the secret of getting soda bread to rise properly. You have to get the loaf done as quickly as you can, so that the rise in the oven is maximized; and with minimum handling. This isn't a bread that needs to be kneaded. Just get it into a soft, mostly-cohesive lump as quickly and gently as you can, and shape it into a round about an inch to an inch and a half thick.
Finally have ready a really sharp knife to do that final cross-cut, which allows the loaf to spread and rise fully. Be careful to slice, not press. You don't have to cut incredibly deep: from a third to halfway down the round is plenty. ...There's endless online lore about how this is supposed to let the fairies out. Fond as I am of fairies, I prefer to think of it as letting the chemistry and physics out. (shrug) To each their own.
As soon as the oven's come up to heat, shove the loaf into the center of the oven on a nonstick baking sheet—I used a silicone mat here, but more for the look of the thing than any real concern about the loaf sticking—and bake it for 40 minutes. When you're done, it should look something like the one in the picture at the top of the post. It'll be easier to eat if you let it cool down most of the way; and a lot easier to slice if you put it in a paper or plastic bag overnight.
Anyway, tomorrow, so @petermorwood won't sulk, I'll make soda bread in the farl style instead of the above style that some of the locals call "cake". Farl's done on a griddle and cut into quarters for baking, and its geometry makes it uniquely suited (as Peter's father used to say) for eating large amounts of butter without a spoon. :)

How to DIY energy drinks for cheap
First, required reading: link to article
Energy drinks have a few vital components:
>sweetener
>flavor
>water
>caffeine
>bubbles (i never do that and don't know how)
Here are some of my favorite things to use:
>granulated sugar (sweetener)
>stevia leaf or granulated artificial sweetener (sweetener)
>kool aid (flavor, sweetener)
>loose-leaf herbs (flavor) (try hibiscus petal, chicory, even lemongrass and mint can be nice)
>lemon juice (flavor, preservative)
>kool aid (easiest flavor/sweetener combo)
Supplies you might need:
>kettle or pot for heating water
>tea strainer ball to keep your leaves out of the final product
>a nice ragu jar or old Gatorade bottle for pre-made stuff
>funnel for pourin
>ladle for scooping liquid into the funnel
Kaffn-8 or any other such liquid caffeine product will do you for caffeine. That brand is super easy and convenient. Kaffn-8 is my favorite for the quality and ease in dosing, as well as the value (15 bucks has lasted me 2 months of daily use).
I like to make a sugar-flavor concentrate, then assemble each glass as I need it. Sugar tastes better when melted with heat than when dissolved without heat, even once chilled. This also allows me to tweak caffeine content. Here is how to make it:
Fill tea ball with herbs (use about a handful or 1/2 cup for every quart of water, you're making it strong)
Heat water and pop the tea ball in
Simmer or keep hot for 10 min
Remove tea ball and turn off heat
While hot, add as much sugar as you had herbs, and mix until melted.
Mix in as much lemon juice (or other assorted acid or preservative) as you can stand. The more preservative, the longer it'll keep
Allow to cool enough to handle
Jar it up, put it in the fridge for later use. You can and should re-use all manner of bottle, just be wary of melting anything plastic or burning your hands w hot water.
A note: the smaller your batches, the less you waste. But high concentrations of acid and sugar keep it good for up to a month in the fridge.
To use: mix water in a cup with your syrup, tweaking concentrations until it tastes good. Add caffeine, measuring your dose carefully.
Then, do bubble magic to add carbonation if you can do that. Maybe you found a soda stream somewhere. If you don't have bubbles, you'll just have to enjoy your energy drinks flat.
And, you're all done!
Now, where to get everything:
(Grow your own herbs if you are mega brave. Mints are nearly indestructible little plants.)
Lemon juice, dollar store. Quality is the same, you've just got to shake it up.
if its a foreign grocer, they likely have herbs cheap. If its a Mexican grocery, they 100% have the best herbs. (Aguasfrescas drink mixes are cheap and THE BOMB, and hibiscus flower always comes in mega bulk) .
Herbalist and spiritual shops have herbs too, and are likely to have tea balls. Branch out! Catnip has been my favorite oddball herb.
Farmers markets also have some (like three if you're lucky) herbs, and you may have to dry them yourself. Since it's punk to reach out to your community, ask around at the farmers market to see if you can get any herb or dried flavorant that's on your mind- small businesses love consumer feedback! You just might have to wait for the plant to grow, heh, but if you're friendly then you'll make friends. Some examples: ask the jam bottler for dried fruit peels, the farmer for mugwort
I get my artificial sweeteners on closeout, my stevia from herbal shops, and my sugar at Walmart (bite me, its cheap and I'm poor).
Kaffn-8 can only be found online, as far as I'm aware. I promise I'm not sponsored, just a grateful caffeine addict.
Do Google your herbs for drug interactions if you take meds. Healthline has good info on herbs. Dried grapefruit rind can mess with my psych meds, for example.
Again, be careful about caffeine. Always dose your caffeine. Having high levels of caffeine on tap is a bit of a big responsibility: I know I nearly bit the dirt from the all-you-can-eat espresso bar at my college. Immaturity could kill you, caffeine is a drug. Count doses, never go above 500 a day, try not to go more than 200 in the same hour.
Now take that money you've saved and give it to a charity to blow a very mean raspberry at nestle. Or, yknow, feed yourself. Its a tough world.

A basic starter project if you want to start growing your own food but have no money & no experience, assuming you like green onions.
Supplies needed: Dead potted plant from free pile/dumpster/friend or family member, used food container, green onion ends.

Steps:
1. Remove lid from container, it's now your plant pot's saucer

2. Either poke holes very carefully and slowly (not ideal) or slice the corners off with scissors (better)

3. Remove soil from the dead plant's pot, put in container. This one was super heavy in perlite (the white stuff, helps with drainage), so I mixed in another pot that had more organic matter (brown stuff, mostly helps retain moisture, sometimes provides nutrients). Water until water comes out the bottom, then let drain in sink until until it's done. Put pot on lid:

4. Stick the green onions in, deep enough that they can stand up on their own, or until the white part is covered:

Why not just stick them in water?
Because they make the water really smelly.
Just change the water often, then it won't stink.
I will forget, and then it will stink. Plus, I prefer growing in soil.
Why do you prefer soil?
Thanks for asking! I started because growing them in water didn't work well for me. But on top of that, if you regrow in water, eventually their growth will peter out. This is because in addition to water and carbon dioxide, plants need other nutrients. These are stored in the bulbs of green onions, but they will be depleted by growth if the plant can't replace them. Potting soil often has leftover nutrients, and if you've got compost you can also mix that in.
Why not just put fertilizer in the water?
Two reasons. First off, that's a great way to grow algea, unless you make sure the water isn't getting light. Secondly, most cheap, widely available fertilizers are meant to be used for plants that are in soil, so they're not complete (they're missing iron and maybe some other things? It's been a while since i looked it up). So eventually, if you use water and normal ferts, the plant will stop growing. If you have access to hydroponic ferts, those would work, but you also have enough money that you're not the target audience for this post.
I don't trust the potting soil from random plants.
Completely understandable, and probably smart too. In that case, you have a couple other options if you want soil for free. First off, you could look for dead vegetable or other edible plants in pots, and know that those will not have been treated with something that makes them inedible to humans. Help! There are tiny flies that look like fruit flies!
Those are probably fungus gnats, and there's plenty of ways to get rid of them. My two favorites are watering a bit less and adding half an inch of sand to the top, making your plants an unsuitable habitat, or getting a mosquito dunk and keeping it in your watering can. Mosquito dunks have Bt, a type of bacteria that kills mosquitos, fungus gnats, and other related insects. There are other types of Bt that go after other types of insect, such as cabbage moths. It's considered an organic treatment.
What about other pests?
I've literally never seen them get other pests indoors.
How much light do they need?
As much as you can give them, probably. If you have a window that gets midday sun, use that. Or a grow light. If they don't get enough light, they'll be floppy and pale, still edible, but not as flavorful.
When can I harvest?
When it wouldn't look silly to harvest them. I generally wait until they're at least a foot tall (30cm). I'll post an update when I do.
Why didn't you just use the dead plant's pot, dumbass?
A) it didn't have a saucer to protect the surface underneath, B) this is a concept post, and often plant pots are too wide to fit in window sills, and C) I didn't like the pot.
Won't it just grow into a bulb?
Nope, green onions are actually usually a different type than bulbing onions. Usually. And they're perennial! I've never had one try forming a bulb, but you can just eat them if yours do.
