#TBT Recipe - ‘Totino's Frozen Pizza - Just Like  Mom Used to "Make"’

Pizza and pop Fridays. (Actually, paaap, because we lived in the Midwest.) My little brother and I lived for Friday nights when we would get Totino's frozen pizza and a Tupperware cup full of paaap. Mostly Pepsi. Sometimes Tab, fortified with calcium for our growing bones. 7-UP was my favorite, but it didn't compliment the nuances of the tangy, red-orange sauce, pencil eraser-like 'sausage' chunks or teeny 'pepperoni' cubes like a lukewarm glass of cola from a two liter.

We had restaurant pizza too. Back in Iowa, Happy Joe's was a pizza place for birthdays where you could watch a man toss his dough through a window - not a euphemism. It's also where I met a very scary five year old girl named Andrea who "DIDN'T LIKE" paaap! WHAT THE HELL? When you are a kid and you are surrounded by seeming endless pitchers of paaap,you drink it!! Because of Andrea, the buzz kill, I don't trust people afraid of fizzies.

Years later and a move from the Midwest to the Pacific Northwest where 'paaap' became soda and the seasons became rain, the Totino's stayed the same. We also had a new local staple, Pizza Haven. Post game, post dance, loitering in front of while you waited around for that Woody Wooderson dude to show up and buy beer, it all went down at Pizza Haven. (Essay forthcoming.)

Pizza Haven delivered - so many prank pizzas courtesy of Kids' Van Auken - you are welcome, Butts Family from across the street.  They also made the best Mexican pizza around despite the fact that the PNW in the early 80's still put ketchup on tacos. We also had a PIzza Hut back in the day when it was actually good and the pan pizza took a good hour to make during which time you drank as much paaap as you could.

Still, through all the restaurant pizza, we would return to the frozen disc of a Totino's covered in parmesan cheese. One year we got sophisticated and instead of cutting the pizza into triangles, we cut the Totino's in half, folded it over and called it a 'calzone'.

My pizza Fridays continued over the years with paaap giving way to beer and Totino's was traded for delivery or homemade. When Boboli (Italian for doughy garbage) hit the scene, I was intrigued. That is until I was asked on a date (one of THREE of my life) and instead of a restaurant the guy took me to his apartment that happened to be in Kona Villages, the complex with a mini golf course where my dad moved to when my parents divorced in 1985 and made me Boboli. Plus, he wore a mock turtleneck.

Boboli, the crust and the dude I would refer to as Mock Neck Boboii, were out of my life, but I still pressed on and began making my own pizzas. Nothing was going to compare to Totino's, paaap and Duke's of Hazzard combo of a Friday night, but I got pretty freaking good at it.

I still have Totino's pizza on occasion, but I draw the line at their pizza rolls. I say soda with my mouth but it makes me feel like a fraud as my heart will always say, paaap. Mock Neck Boboli is still single and now managing Kona Villages and is gluten free.

Here's my go to crust recipe - no rise required.

INGREDIENTS:

1 1/4 oz packet of yeast

1 cup warm (not hot or you will murder your yeast; too cold and they will hate you)

2 1/2 cup flour

2 TBS olive oil

1 tsp sugar

1 tsp salt

DIRECTIONS:

Preheat oven to 425 degrees.

Dissolve yeast in warm water in a medium bowl.

Add the rest of the ingredients.

Mix for twenty strokes.

Let rest for ten minutes.

Press into greased 11 x 17 pan. Or a round pan. Or just a cookie sheet at make a rectangle/round hybrid that I like to call 'rustic'.

Add sauce and topping and bake for 15 - 20 minutes. Sometimes I like to bake the crust for a couple of minutes before putting on toppings if said toppings are already cooked (like ground meats, chicken, etc)

Serve with something with fizzies.
