I wish you and your family the very best for this new year and hope it brings you happiness and that you all stay safe during some pretty crazy times! ♥️🥰 . . Puli pitha (sweet coconut fried dumplings) are a pretty classic sweet eaten during the new year. They’re pretty easy to make - all you need is to toast some bay leaves, cinnamon and cardamom in a bit of oil and add in 2 cups of shredded/desiccated coconut. Then add in some jaggery that’s been warmed up in the microwave (I used date palm jaggery but anything goes). Mix it all together until theres no water left. . . To make the dough just get plain flour (1.5 cups) and add some oil and water to make a dough. Roll out little sheets (doesn’t have to be perfectly round phew! 😅) and put some of the coconut mixture on one side and pull the other side of the dough over to make a dumpling. Get a small bowl to cut the dumpling and make a fancy design along edges (or press a fork along the side whatevs). Deep fry them and serve warm (or cold but warm tastes better I reckon).
