#testkitchen #quarantinecooking Tofu “ Not Chả Cá ” — I adapted this Hanoi fish specialty into a vegetarian version with a couple of slight changes (substituting garlic scapes for spring onions, and yogurt for the sour fermented rice used in the marinade, plus used normal steamed rice instead of vermicelli). The result was really fabulous. The tofu took on all the flavor of the galangal, turmeric, shallot, and garlic wonderfully, and the contrasts between each element were pronounced. Just arrived in the Pink City of Jaipur and had to experience the legendary Handi rooftop and its Rajasthani specialities. The picture doesn't do it justice, but I think I've found my new favorite mutton preparation — Jungli Maas. This is the dry (gravy-less) version of Laal Maas, a spicy, luxurious desert dish traditionally made with game meat in times of drought, and a favorite among royalty. It's paired here with Bajre Ki Roti —made with pearl millet — and the luscious vegetarian Hara Bhara Kabab with spinach and potato. Final lunch in Delhi and had to go for my favorite dish, Kadhi Pakora, the silky, sour and savory yogurt based curry spiked with chili. Interesting thing about this establishment is that they don't use onions or garlic, as evidenced by the many signs proclaiming it.
