Oh, it didn't even need to be that complicated. The internal name of the Bloodletting Beast is "FounderBeast". As in, most likely, "founder of the church".
If you follow SinclairLore on youtube, Sophie talks at length about the iterations Bloodborne went through, and one of those was pointing out that the Bloodletting Beast was most likely an earlier version of Laurence. I don't remember exactly which video it was, but I think she references it in a few, and either way, the channel has some really neat insights into the development of Bloodborne:
Which is to say: You're absolutely right that he is the Bloodletting Beast, but rather than it being a "physical body vs. spiritual body" thing, it's more of a "devs changed their mind" thing, or it at least appears that way. But don't let that stand in the way of a good theory and/or story idea!
Now, if you want the *deepest* (and earliest) Bloodborne lore about Laurence, then:
Laurence wasn't even the founder of the Church. He was your traveling companion that got stuck in Yharnam on the night of the hunt with you. After you defeat the early version of Vicar Amelia in what is now the Witch's Abode, you touch that tied-up Hunter in the back room and you "inherit the onus of the hunt" (remember that phrasing from Henryk's armor set? And what is reference in the Heir Rune?) from the corpse. There's item ids and even early audio files that show what they were sort of originally kicking around as ideas.
Now I don't ascribe 100% to every theory that Sin and Sophie throw out there (I have some serious disagreements to the nature of Vermin and the assertion that they're forcing people anemic and in turn that makes the populace yearn for the blood. Way too much emphasis is put on Blood being an addictive substance for that to ring true to my mind), but there's a LOT of gooooood stuff in there otherwise.
Be warned, though. Watching too many of those videos (and others like them, such as from Lance McDonald, Zullie, etc.) will show you just how much iteration decay Bloodborne actually went through. There was. A lot.
To this day, the Bloodborne they cut seems even more interesting than the Bloodborne we got. Laurence being the Bloodletting Beast isn't even the tip of the iceberg, imo.

[Bloodborne] Kos and the Drifting-Ashore Gods
Kos, or some say Kosm, is one of the most enigmatic Great Ones of Bloodborne’s mythos. The interaction her corpse has with the villagers of the fishing hamlet, whilst dripping with Lovecraftian influence, is also heavily rooted in Japanese belief. The most striking comparison is between Kos and the Hyochakushin, the drifting-ashore god. 
Before the implementation of the keel, Japanese fishing boats were limited to a small area along the coast where they could safely fish. However, sometimes whales would, in a process called passive whaling, beach themselves on the shore. Much like a cargo cult, these people did not know where this bounty came from and saw it as a blessing from the gods. 
Kos acts very similarly to this, her corpse washes ashore near the fishing hamlet and in turn provides blessings to the hamlet’s residents in the form of the Kos Parasites or the slug-like creatures we see throughout the fishing hamlet. This is similar to how the bodies of these beached whales would draw in schools of fish, which would also be seen as a blessing from the Hyochakushin. The hamlet's residents worship the corpse as “Mother Kos”, and are subsequently transformed into the fish-like creatures we see in the Hunter’s Nightmare, most likely through ingestion of the Kos Parasites. 
One of my favourite things about Bloodborne’s lore is that although there is a huge Gothic and Lovecraftian influence, we see scatterings of other influences which make Bloodborne’s lore both recognisable and refreshing. Just an interesting connection I wanted to share. I hope this allows others to find more interesting connections within these games, if you have any feel free to share them with me.
Honestly, I’ve had this connection in my head for a while so sourcing where I got these ideas from is a bit hard. I think the main idea came from a podcast done by Sophie and Sin of Sinclair Lore (please go check these guys out their work is great), but I don’t remember the specific video since I listen to them at work so I’ll link their entire channel. There are also a couple of blogs I ran into when looking up some info for some worldbuilding I was writing so I’ll link those as well. If there are any other sources that show these ideas please let me know.

Metro mayhem
Some idiot pepper-sprayed 15 people during an argument on the Montreal metro this morning and 3 of the 4 subway lines were closed for over an hour during morning rush-hour.
The silver lining is -- it wasn’t in the US and 15 people weren’t shot.

I don't know many places for a lot of DS1-3 stuff except Lance McDonald's channel and Sinclair Lore's. But, they have basically everything in their respective videos. Soulsborne Cut Content is genuinely fascinating to look at because it can actually change your entire view on the games as a whole. While there's a lot of cut content that is known but cannot be publicly shared, but maybe someday. I insist if you ever have a few hours to look into every game's cut stuff because it can take you hours and days of looking and you don't get bored. Enjoy >:D
I hope one day someone is able to steal a first directors build of DS2. I wanna see what the game was before it became an incredible mess.
Same with BB, I want to see a full on DeS2 build because files from DeS2's time do exist but only armor sets. (Though I do know it was a really indirect sequel even from the beginning it was 100% covert.) Souls Cut Content is so fun, god. If you've never looked into it, do it. You won't regret it ever.
