Some ribs I smoked awhile back for practice. Some of my slabs have been dark some light and some like this more in between. I love practicing on making these and learning just a little bit more every time I cook. Each cooker I have presents it's own issues or drawbacks as well as advantages. Learning the differences helps to get things right. Good thermometers also help quite a bit. I've never done a rib marinade but maybe that's next. Read somewhere that some folks do it and it really makes their ribs great. My favorite dessert of all time and one I'd like to have on a menu at my own joint someday. To me this would be unusual at a BBQ joint. What unusual or unheard of dessert would you like to see on a BBQ joint menu? Took this pic at Toucano's in Albuquerque, New Mexico and it isn't easy finding this dessert even locally. Some restaurants have it on occasion but not really on a weekly menu. Point was on point. Probe went in and came out like butter. Flat did the same and was pull apart tender but was a little dry for my taste. Every time I smoke a brisket I try to learn something from it. I think next time I'll be wrapping a little sooner into the stall. Flavor was great and of course the very tip piece my daughter wanted. More than halfway through the cook and I've still got a little more than half a bag of @cowboycharcoal left.
