When I was in 香港 / Hong Kong, I had some of what has become one of my favorite styles of fried chicken, 大雞排(大鸡排)XXL Fried Chicken from 豪大 / Hot Star.
After coming back to the USA, my partner and I missed the chicken that we had and decided to make some for ourselves. The batter is made with tapioca and potato flour and is thus gluten-free. The spice on the chicken is a mixture of椒鹽(椒盐)/ spiced salt, paprika, 花椒粉 / Chinese "prickly ash,"五香粉 / chinese five-spice, and capsaicin powder.
This picture is from one of the most recent times that we made it at home, using chicken thighs instead of chicken breast.

Shihlin recently opened inside the 99 Ranch Market in South Fremont. They’re known for their XXL crispy chicken ($10.50) but they also have rice boxes (aka rice plates), noodle soup, fried snacks, oyster omelettes, milk tea/tea, and Taiwanese shaved ice.
Grandma’s braised meat rice ($10.50): I used to think this was minced pork but according to the menu, it’s minced chicken. Since it’s very saucy and gravy like, it’s hard to tell. While it is very saucy, they also give you lots of steamed white rice, so the sauce helps add flavor to the rice. The sauce is slightly sweet but also has soy sauce – it’s nice – not too sweet and not too salty. Their braised tofu slices are tender. They also included fresh cilantro, pickled mustard greens, and half a soy egg. It’s filling and comforting.
Portions are generous. I ordered online and the food was ready when I arrived 15 minutes later. They also have a rewards program. Credit cards are accepted and they also have an iPad set up so you can place your own order there.

{Make ready 1 cup of plain flour or cornstarch.
{Make ready 2 cups of potato flour.
{Prepare 2 of large eggs, lightly beaten.
{Make ready Handful of fresh basil leaves.
{Take of Vegetable oil, for deep-frying (or any cooking oil, enough to fully cover the chicken).
{Make ready of Garnish:.
{Prepare 1-2 tablespoon of Taiwanese pepper salt spice powder for dusting (use more or less depending on preference).
{Get Handful of fried basil leaves.
Chicken thighs are best for juiciness and flavor. Most Taiwanese fried chicken is made from boneless skinless thighs. Let chicken fry on both sides until it becomes golden brown (about 3-4 minutes)..
Fry a few pieces of chicken at a time (about 4-5 pieces depending on the size of your pot or wok). When the chicken is done, remove and place on a baking tray lined with paper towel to drain any excess oil..
Once all of the chicken has been cooked, transfer to a large mixing bowl. Then going back to the oil place in handful fresh basil leaves. Tip: Be careful as the oil will splatter if basil leaves have any extra moisture of water in it and may make a popping sound. The basil leaves cook quite fast, so you only need to fry them for a few seconds. Remove once crispy. Place basil leaves on baking tray lined with a paper towel to remove excess oil..
Now go back to the chicken and add the crispy basil leaves. Now dust generously with the Taiwanese pepper salt. Shake the bowl and toss the chicken gently to coat every piece of it. Serve immediately while pipping hot. Eat it as a snack or as a side dish accompaniment with other dishes..

I was a big fan of the Shihlin location in Milpitas but the last time I went and ordered the XL chicken cutlet, the breading kept falling off the chicken. The Milpitas location was Shihlin’s first in the US. They now have a few locations in the Bay Area, including one inside the Stonestown Galleria food court.
Shihlin serves Taiwanese street food. Place your order from the iPad they have and you’ll get a number. They’ll call your number when your order is ready.
They’re best known for their XXL crispy chicken steak (breast or leg & thigh, $10.50). Other items include rice boxes, chicken rice, noodles, snacks, shaved ice, and drinks (e.g., milk tea, plum juice, smoothies). The XXL chicken and popcorn chicken are fried to order. You can specify how much seasoning and chili powder you’d like. The seasoning powder has salt, pepper and other spices.
Popcorn chicken ricebox ($15): This was a lot of food! Including steamed white rice with ground pork in a savory soy based sauce on top (not too salty, good amount of meat), broccoli and carrots (simple but I liked how they still had a bit of crunch), soft tofu in a savory sauce, ½ a tea egg, and big pieces of tender popcorn chicken with fried basil. Very tasty! The breading didn’t fall off the chicken this time.
My order was ready pretty quickly considering that they fried the chicken to order. They have a rewards program. Credit cards accepted. SF adds an extra 3% charge for takeout orders.
