I might not have any leftovers this Thanksgiving because after the no-company Covid years (🤬😡😥) my usual crowd will be joining us! I am so thrilled about that. So I really don’t care about leftovers. BUT if there is some extra turkey I surely will make pot pie, which I often make whenever there are meat leftovers (and sometimes just with vegetables). A little late posting but it has been a hectic week following the holiday! I love a good remix on leftovers and this one is now tradition in my house... leftover Thanksgiving waffles. Super easy to make - crumble up your leftover stuffing/dressing and add about a quarter cup of broth (just enough to moisten) and one egg as binder. Mix all together and put a scoop/hefty spoonful in each section of the waffle maker, spread evenly and close. Cook until the waffle is firm and golden. Then pile high with leftovers of your choice + an egg on top because that makes everything better! The hubs did turkey, gravy, egg and cranberry sauce. I chose turkey, harvarti cheese, 2 eggs and Sriracha. SOOOOOO GOOOD!!!!
