Last part of my birthday weekend was a BBQ which brought @thecrimsonsparrow out to dress up a birthday hot dog. Then something happened. Looking at labels on bottles and packages and this great rice we use for miso and koji I saw actual #hiragana, #katakana and #kanji that I understood. And everything changed. I couldn't care less what anyone thinks about my decision to study #japanese and especially #kanji so late in life, and hopefully to use that knowledge to better understand life. #barley #koji #koji2017 done at 32 hours and being chilled down as we write. Does anyone out there think there is a direction correlation between exogenous heat production and density of grain or legume density ( for example whether the #inoculated item is one or two inches thick) or whether air circulation or tray stacking is more important. At a certain point barley takes off and produces a great amount of heat especially if stacked in towel wrapped trays. In stacks of trays the top and bottom trays can be kept at 85F but anything between them easily soars to 100F and must be mixed once an hour. #culturesgroup #chefkenfornataro #culturesgroup @tmgastronaut @sandorkraut @ourcookquest @thecrimsonsparrow
