To be honest, there are so many aspects of fandom Kakashi I hate. I know hate is a strong word, but yes I detest them with all my heart. Kakashi being called a twink is one of them because- yeah that's really off. Another thing is the idea that Kakashi is a yandere. I don't get it. If people think canon Kakashi is a yandere, I seriously doubt whether they're watching Naruto in the first place.
I do agree that he does give a cool, mysterious vibe, but underneath the surface, he's a real dork and I love reading stories that show that side of him. Many people fail to see that, but I think that's what I love most about him.
He is a very real and relatable person, but a significant part of fandom makes it seem otherwise. I'm not saying that I don't like different interpretations of him like in Mafia AU or sth like that, but what I have a problem with is people misunderstanding canon Kakashi, calling him a bad boy and whatnot. Because he's not.

Anyway, ah yes, yandere stuff… I mean, I wasn’t aware anyone actually believed that stuff seriously made sense for his canon character, I thought that was like a fanfiction trope that’s popular (for reasons I personally don’t get but you do -but interestingly there are characters I can see doing that, Itachi and Obito come to mind for some reason), but yeah I can’t see that for Kakashi at all.
I hear what you’re saying with the dorkiness and softness, and I love it as much as the next fangirl, and i am not saying a fic can';t be just fluffy cuz it totally can, but in terms of kakashi interpretations/presentations in fandom... tbh even with that I feel like it gets way over-emphasised sometimes. I think some people don’t want to contend with the tougher, rougher darker parts of him (which is something people do with a lot of badass male characters) so they just focus on him being soft and silly, which admittedly is a part of his personality too, but it’s not all there is and the development and reasons for that are complicated too. He’s really multi faceted so it can be hard to get down, for sure. But part of what does it for me for Kakashi is his darker, mysterious aspects, his sarcasm etc as well as his goodness and honorable nature despite all that. If he was just a soft, sweet boy I don't think I'd care that much about him. Part of that is me needing an edge and masculinity to my favourite male characters, but I think Kakashi's multi-facetedness and his layers is what makes him appealing. But yeah, bad boy Kakashi… you can make an argument for ANBU Kakashi being like that, but it doesn’t really fit his older iterations. Yep, AUs are great because they allow you to explore all kinds of possibilities, and you can do that in canon universe fics too, but when certain non-canon ideas get widely treated as canon and discussed as such it’s a bit jarring.
