This recipe for 13 Bean Soup is such a wonderful humble dish, full of flavour and chock full of nutrition. It starts with @bobsredmill 13 Bean Soup Mix. We like it as more of a bean stew but you can thin it out with broth or water, if you want bean soup. Serve with hearty whole-grain sourdough bread. This is a regular pantry item in the @urbnspice kitchen. Here is the recipe that is conveniently printed on the back of the bag: 1. Wash 500 ml (2 cups) Bob’s Red Mill Soup Mix, then soak overnight. 2. In the morning, drain, rinse and bring 2.5 L (2 1/2 quarts) water to boil with the beans and a ham hock. (I didn’t have a ham hock and used bacon lardons instead). 3. Reduce heat and simmer for 3 to 3 1/2 hours. 4. Add 250 ml (1 cup) finely diced onion, 1 (15 oz) can of tomato sauce or 1 L (1 qt.) tomatoes (I added a large 796 ml. can of diced tomatoes), 1 1/2 teaspoon to 1 Tablespoon chili powder, 2 teaspoon garlic powder (or 2 cloves garlic, minced). Simmer 30 minutes. Makes about 8 to 10 servings. Drizzle with olive oil before serving.
