I had a fuckin' time with this one. Instead of deep frying them on the stove, I figured I'd use this little deep fryer we bought last year. My candy thermometer is unreliable trash, so I thought this would be the smart option instead of spending money on a deep fry thermometer.

I hate dredging things. I hate dredging things but I love breaded things. It's a dichotomy. There's no space in my kitchen for this madness, thank fuck that deep fryer is so small. My panko mix has some of that good parmesan I bought for the mac and cheese in it.

Then the brand new deep fryer shit the bed and shut itself off while I was frying my second cutlet. We had to figure out how to elevate the fryer full of hot oil so we could reset it, it was a whole thing. So, all that to say that only two of the cutlets turned out properly cooked.
But! They were still very good. Crispy but tender.

The name says it all. Very basic salad, I only decided to make it because I had leftover yogurt to use up. I wish I had made this one with the cast iron chicken. They'd be a great pairing.

In the dressing recipe, Tony says that the fish sauce is optional, but I completely disagree. You have to use it. It adds an important umami element for me, and I'm not much of a fan of fish sauce.

A pretty salad. Butter lettuce is a little tender for my liking, but I'll make this again for sure.

Taste was a 4 out of 5. Simple but very good.
Difficulty was a 3 out of 5. It would be a 4, but that's purely because of my deep fryer issues.
Time was nearly 2 hours. Again, I'm blaming the deep fryer. Should've been more like an hour.
When I make this again, I'm going to add some salted sunflower seeds to the salad. Oddly, it needs a little more crunch than just radish, apple and carrot.

For the extravaganza, can I PLEASE order one “trying to cook their favourite dish” for OttR Leto. Where, okay this is a little specific, where reader is a vegetarian but it’s Leto’s birthday and his favorite dish is Cotleta Alla Milanese (or something like that 😂, doesn’t have to be THAT specific) and she wants to cook him a romantic candle lit meal, she wants it to go well, but she’s running into issues and worried that it’s not going to be good and worried she ruined his birthday dinner. Story can go anywhere from there; can be cute, or romantic or funny or angsty, whatever you like!

“What the fucking fuck!” You slam the pan down in frustration, glancing back and forth between the disaster you’ve made and the picture at the top of the recipe. To no one’s surprise, they look nothing alike.
It’s not like you were a horrible cook, in your own opinion you were pretty decent. You, however, haven’t eaten or cooked meat in the past five years and you seem to have forgotten every cooking technique you’ve ever learned.
Looking at Leto, it shouldn’t surprise you that his favorite is Italian: he dresses like he walked off the set of some shitty mob movie, gold chain and all. And of course his favorite can’t be something like pasta or gnocchi, it’s veal. He loves to eat baby cows.
Thinking about that now, in your disaster of a kitchen, almost makes you want to burst out laughing. Here you are, in a fancy-ass kitchen with the highest quality ingredients, and it looks like it’s been ravaged by bears.
When Leto had left earlier in the afternoon, you’d assumed you’d have enough time to cook him his favorite meal, put on a dress that’s only acceptable in your own home, and give him the best birthday ever. Now, though, the clock is ticking and everything’s gone to shit.
It strikes you just how cool-headed Leto must be, to do the job he does and not lose his temper all the time. And then here you are, practically having a breakdown in the kitchen because you couldn’t get a meal right.
You can feel yourself creeping towards I’ll-never-deserve-him territory, because even your attempts at giving him a gift are going to hell. Here was the man who had everything, who’d buy you anything you ever mentioned liking, and you can’t even make dinner for him without fucking it all up.
In your current state of self pity, you don’t hear the footsteps approaching behind you, don’t realize there’s someone in the kitchen with you until you feel those large hands you love so much grab onto your waist. Even though you can tell it’s your Leto, you jump a bit.
“Sure, scare the girl holding the giant knife,” you say as you twist yourself in his grasp, to look him in his handsome face. He just smiles at you, leans forward to kiss you despite the frown plastered on your face.
“Happy birthday,” you tell him as you pull back, and try to put a smile on your face despite how goddamn defeated you feel, “I tried to make dinner. It didn’t work out too well.”
Leto looks around, eyes widening as he takes in the disaster of your kitchen for the first time. His men whisper in fear about his short temper, but he only looks at you with gentle fondness. “That’s alright, we can always order something.”
“No, it’s not alright,” you pry his hands off your hips, push yourself away from the counter to pace wildly around the kitchen, “I wanted to give you the best birthday ever. I was gonna make your favorite dinner and make myself all sexy and I fucked it all up and ruined your birthday.”
You pause your ranting as Leto plants his hands on your shoulders to get you to stop walking the length of the countertop. “I just wanted to do something nice for you.”
“Princess,” Leto sighs, looking at you with nothing but love despite the disappointment you feel crawling in your chest, “it’s already the best birthday ever, I’m here with you.”
Laughing at his cheesiness, you wipe at the stray tears that have escaped your notice during your ranting, “You’re just saying that, you sap.” He raises an eyebrow at that, and you can’t help but to crack a smile.
“I’m serious. We’ll order from that Italian place you like, have a nice dinner, and then spend all night together,” his hands have slipped from your shoulders, trailing down your back to settle at the curve of your ass.
“You’re not mad?”
“No,” he squeezes at you gently, “I’ll make Rigo clean up the kitchen tomorrow, we’ve got shit to do now.”
With that, he kisses you deep and long, stealing your breath away and making you forget about your disappointment and frustrations, making everything except for him vacate your mind. By the time you make it to your bedroom, clothes strewn across the hallway floor, dinner is the last thing on your mind.

In London in 1885, there was a cheap Italian restaurant (its name and location haven’t survived) where a person could dine on a breaded veal cutlet served with curry sauce instead of the usual wedge of lemon. Breaded veal cutlets – often on the menu as côtelette Milanese – were a standard item at Victorian Italian restaurants, but the curry sauce was a novelty. A writer in the Caterer was enthusiastic: ‘Its crisp breadcrumbs will become slightly moistened by the sauce, but the eggs will hold good against curry and gravy.’ (This cutlet actually predates the original Japanese katsu curry, pork tonkatsu, first served in 1899 at a Tokyo restaurant called Rengatei.) Before the First World War put an abrupt stop to it, the possibilities for eating out in London were far more extensive and varied than one might imagine. Brenda Assael’s book – which is full of rich and original research – concentrates on what what she calls the city’s ‘gastro-cosmopolitanism’: a rather off-putting term for a useful concept. Like modern Londoners, the Victorians could have Indian food and Turkish coffee, Italian pasta and Malaysian curry, and Assael argues that the London restaurant helps us understand the diverse economy of 19th-century metropolitan life.

This was the recipe that I bought the mandoline for in the first place, but then kept putting it off. The waffle cut was mediocre and inconsistent. Kind of a shitty mandoline, I'm half tempted to return it.

Anyway, fuck my tiny deep fryer. You might recall it from such recipes as the Veal Milanese or Macau Style Pork Chop Sandwich. I don't trust the damn thing, so I used a pot instead. I'm also too cheap to fill a big pot with peanut oil for this, so I worked in tiny batches like an asshole.

Tony suggests buying top quality paddle fish caviar. I suggest, buying whatever black caviar is available to you. This is lump fish caviar. You might recall them from the "very beautiful, very powerful" video circulating the Internet.

My first round had too much of every garnish. He's not very specific on the amounts of garnish. "a proportionate amount of salmon", "a dab of crème fraîche", "a small dab of caviar". Like, come on man, it's a recipe. Give me some solid measurements.

Round two was much better. I added some dill to this round too, I felt it was missing something. Fits the flavour profile well.
The potatoes were just okay. The cut was bad, so they cooked unevenly. They're barely waffled, the holes are mostly just on the edges of the potato.
If I was actually catering a party with these, I would have the crème and the caviar in their own little piping bags for easy portioning and better presentation. They pair well with white wine, we tried it.

Taste is a 2.5 out of 5. Enjoyable. Fishy and salty. Very Tony.
Difficulty is a 1.5 out of 5. As long as you're not afraid to deep fry at home, this is pretty easy.
Time was around an hour. All your time is spent prepping and frying the potatoes. The rest is ready to go, straight out of the package.
This could easily be made with sour cream instead of crème fraîche. It's not as fully flavourful as crème fraîche is, but it's much cheaper for very little difference.
Honestly, add the dill. Otherwise it's just fishy and briney, which is fine - but kinda boring. You could even add a single caper, or some red onion, or lemon zest, or all of the above....

Day 6 - El Calafate and Buenos Aires
I wake up at 3:30am - still jet lagged, still too hot and now I have a sore throat and runny nose. I think the universe is conspiring against my sleep so I take a sleeping tablet.
We have breakfast and it’s the same as yesterday 😕 by the time we’ve showered and packed we are already a little late to check out. We drive into town to have a wander and take some pics of the autumn trees before we drive back to the airport. Our flight is at 2pm and we have to drop the car back. We didn’t even need to fill up with petrol again so we’ve paid the equivalent of $22 for petrol for all of our travel.

A few quick empeñadas at the airport and we are off. Goodbye Calafate - you’ve been incredible! The flight back is uneventful.
The Uber driver that picks us up from the airport speaks English!! We have a chat and it turns out that he is from Venezuela and is escaping the chaos there. He studied civil aviation but cannot get a job in this in Argentina because he’s not a citizen. He works in IT but drives for Uber on the side. He says that the new president is “the best president in the world”. It’s so interesting to get differing perspectives on this.
Our new Airbnb is located just a few blocks from our last one so it feels good to be back in the same area that we are familiar with. The apartment is fairly modern and is on the 13th floor with great views of Palermo but it does seem that the Argentine building standards are even worse than Australia which is saying something!
We head straight out and grab some hot chips to keep us going before heading to to El Ateneo Grand Splendid - it’s a bookshop based in an old restored theatre. It’s so beautiful inside and we snap away with a few other tourists whilst locals browse books.

Afterwards we get a gelato - we are really not coping with these late dinners so need the energy by this point in order to think straight. Ok we can focus on what to get for dinner and stumble on a place a few blocks down. It’s a real locals place and it’s packed so good sign. Through fumbled Spanish words and hand gestures we order the veal Milanese with cream sauce and lettuce salad (shared between us). The Milanese comes and it’s the biggest thing I’ve ever seen!! We were pre-warned by our Spanish friend the other day how big they were but I didn’t quite expect this! Even between two this is going to be a struggle. Around us I can see people ordering the dish for themselves and cannot fathom! It’s so good and it’s covered in potatoes but again very indulgent. The salad never turned up so I guess it wasn’t meant to be.

Ok it’s time to Uber home. Jack crashes as he was up way earlier than me but I manage to get the laundry done before passing out.
