I haven't shared from the Flavours range lately, and this Mint Choc Chip is so good! I use fresh mint leaves to get the minty flavour into this chocolate mud cake, and then remove before baking - nobody needs little bits of mint leaves in their teeth when eating cake! Then I use more fresh mint to make a minty buttercream with tiny pieces of shaved chocolate chunks swirled through.
