Kevin plating our lunch on a break from cutting and wrapping my buck neck and front end. Many benefits of cutting in stages. Neck and shoulders are braised for the most part. There are two exceptions in the shoulders, and they鈥檙e killer cuts! But generally speaking these primals benefit little from additional ageing. Hinds and loins can sit in the cellar for another couple weeks. Another bonus is that it isn鈥檛 a marathon as Kevin puts it.
