When you make a movie or limited series to try to reboot a beloved TV show, it should have an ending that leaves the audience feeling good. It should not:
Undo all the progress/growth you leave the characters with at the end of the original show
Brush over questions that clearly should have been dealt with in the interim space but aren’t because the writers haven’t put the time or energy into them
Kill off fan favourites for shock factor
Treat the end of your movie/limited series like a season finale that is expected to continue with cliffhangers
It should be a gift to the fans who stuck it out with you, and who in turn may very well rally around your cause and spark new interest in a reboot. It shouldn’t be a big middle finger to us.

Unpopular opinion: it's not Waverly's fault that Wynonna is sad.
"she drinks herself to sleep every night while you giggle in Nicole's arms"
Is it true? Perhaps. But what exactly should Waverly have done different? Not get engaged? I'm not blaming Wynonna for being out of it, I really think it's understandable and fair. She lost Alice, she lost Doc, she lost the curse and now she's afraid to lose her sister. But Waverly's happiness is not the problem. The problem is that she should talk to Doc, she should forgive herself for giving up Alice and maybe even go get her now that the curse is broken. And she's not doing that, she's hiding in her job and in her whiskey. And I get that it's difficult to get out of a situation like that on your own and that's why the intervention was so important. Waverly is still by her side and she's trying to help her by getting her to talk to Doc and stopping her from doing things she will regret even more. I don't get why everyone is so upset with Waverly. She is clearly so worried about her sister and she's trying to do her best.

Wynonna Earp head cannon:
Nicole kicked the chicken because, in her drunk and lonely state, the first thought she had when she saw it was "Waverly's vegan". Just as she would any other time she sees meat. So in a heartbroken rage, she kicked her pain away.
100% probably reading too much into it but it was definitely the first thought I had
