it's hard to say since a good majority of them aren't proud of what they do, whether in the past or now in the present. most of them have regrets of what they should've/could've/would've done, and what should be an accomplishment isn't seen as such

but to actually answer the question, I have to say evander and kirke are the only ones that are proud of what they've done

for evander, the accomplishment he's most proud of is surviving and thriving in his work as a chemist, and he makes note to mention it often. I peg him as a mechanical/alchemical genius, which isn't something his family puts much stock in because it does not bring in the money (plus they never really saw evander as anything other than a no good bastard). evander put his nose to the grindstone and managed to become master of his own little guild of fellow chemists that combines elements of magitek and aetherology into alchemy—don't get it confused with the alchemist's guild, he'll get pissy and declare his former mentor is an incompetent twit

for kirke, being a clone of amon, she's extremely proud of the fact that her biggest accomplishment is making a name for herself as the realm's premiere necromancer and one of the last surviving scientists of allag. she takes pride in knowing that her intellect and knowledge are unmatched, and she takes every second of the day to flaunt it to her 'minions'. for the garlean scientists that employ her, she's a valuable resource in their quest to further the wonders and horrors of magitek, but they could do without kirke's braggadocious attitude
