#cultivateawe : Joy. Amazake! I made Japanese amazake for the first time yesterday, and today enjoyed it along with our Ethiopian Fitfit. Amazake is a Japanese nonalcoholic beverage made of rice that has been fermented with koji mold for a day, the amylase enzymes released by the koji converting the complex carbohydrate rice starch into sugars. (Koji mold is responsible for fermented foods such as miso, soy sauce, tamari, and sake.) This results in a naturally sweet drink with umami richness that complemented the Ethiopian fitfit quite nicely! I followed the recipe by @justonecookbook titled “Amazake (Fermented Japanese Rice Drink) 甘酒.” I used Hokkaido Yumepirika rice from @the_rice_factory_ny plus @coldmountainmiso koji, fermented in our @zojirushiamerica rice cooker. Warm up your morning with a hearty gourmet breakfast at Sokyo, whether you enjoy their buffet, a la carte dishes or a combination of both. Continue to squeeze in more flavours to get a taste of a little of everything starting with their selective continental buffet options from the typical bread, pastries and fruit to soba noodles, yuzu muffins and more.. (drools). Accent your selection from the a la carte menu including the eel omelette - a simplistic dish made to tantalize the sophisticated palates. Mix it up with the seafood bowl with typical fresh Japanese flavours including sashimi, roe and topped with a 63 degree egg that just oozes with every spoonful. This was definitely a premium breakfast experience but the perfect experience after a staycation at its beautiful hotel.

#cultivateawe : Joy, Gratitude, Inspiration, Love. Memorial Day Weekend 2020. Thank you so much @snowpeakusa for the “At Home Campout” inspiration! Much cooking and experimentation happened at our fantastic backyard family camping trip. The whole family got involved, and the results weren’t bad for campfire cooking with a makeshift cooking tripod, dutch oven, cast iron frying pan, and grilling grate. The menu included a vegan corn chowder, a Dutch oven loaf of bread, nectarine dump cake, cinnamon rolls, Navajo flatbread, and vegan shish kebab skewers. We cheated and used our rice cooker for the Hokkaido Yumepirika brown rice from @the_rice_factory_ny (hey, this is our first time home camping)!
