Fish Finger Bhorta
As soon as I saw this recipe published in The Guardian last year I knew I wanted to try it. There is something that is visually enchanting about the ruby red slices against the golden yellow of the fish and chips. Credit of this recipe goes to journalist Ash Sarkar’s Twitter, and was recently published in Nigella Lawson’s Cook, Eat Repeat. This has definitely been added to my routine of weekend…

Grilled Peach/Nectarine/Apricot and Mozzarella Salad
Grilled Peach/Nectarine/Apricot and Mozzarella Salad
This is another summer stable that is inspired by Jamie Oliver’s Grilled Apricot Salad from Jamie Cooks Italy. It’s refreshing and I often make it with whatever stone fruit is in season. The salad below if serves four people as a side dish. Ingredients: 4 Stone Fruits (yellow peaches, apricots, or yellow nectarines), washed Fresh thyme, or basil 1 cup green leaves (butter lettuce or rocket…

Stuffed Zucchini Flowers with Ricotta
Stuffed Zucchini Flowers with Ricotta
With spring/summer comes one of my favourite vegetables – Zucchini and their flowers. While I am not quite the green thumb I wish I was, I fortunate to receive some zucchini flowers from my aunt Silvana and these proved a perfect light dinner on a warm night. The great thing about this recipe is it can easily be updated to what flavours you have in the house. Stuffed Zucchini Flower…

Zucchini, Ham and Cheese Muffins
Zucchini, Ham and Cheese Muffins #covid-19 #baking #pantryitems

This is one of my first bakes of self-isolation due to COVID-19/Corona Virus, and only my second bake since the beginning of December, 2019.
It’s a breeze to make, and is basically a zucchini/courgette slice in a muffin. I find I much prefer this texture to the typically zucchini slice, it’s less eggy and the ham instead of bacon adds a nice flavour.
Zucchini, Ham and Cheese Muffins Makes: 12…

Apricot Almond Cake, with Rosewater and Cardamom
Be tempted by this Apricot Almond Cake, with Rosewater and Cardamom #baking #nigella #apricotalmondcake #recipe
A few weeks ago, Alex and I had a rare Sunday afternoon free and we made the most of it by baking together. We made some spiced nuts, as well as a nut loaf, however the hero of the day was without a doubt this Apricot Almond Cake. I loved the idea of this cake, with the fragrant cardamom, and pistachio crunch working in perfect harmony. It’s difficult to stop at one slice. I also found the…

Christmas Cookie: Golden Ginger Star Biscuits
It’s less than a month to Christmas, and I hope our readers are not overwhelmed with the stresses of the season. I love the season of Christmas, as friends and family get together. Coming from an Italian background, Christmas lunch is a feast, a celebration of the joy of family. When I think of Christmas, I think of friends, family and good food. While in Australia we celebrate in summer, I still…

Chocolate Brownies by Nigella Lawson
Brownies; Fudge or cake? Everyone has their own opinion and their own preference. I am firmly in the fudge group, I love the dense gooey centre that melts in your mouth. This recipe is extremely easy to make, I have been making it for as long as I can remember owning Nigella Lawson’s How to be a Domestic Goddess. I take a lot of joy from making this recipe, I love stirring the chocolate and the…

Thanksgiving: Easy as Pumpkin Pie
Now, you may think it’s a little odd for an Australian Blog to feature a recipe on an American Thanksgiving staple – Pumpkin Pie. However, this blog post really started for Canadian Thanksgiving, where I was asked by a colleague to bake a pie for her as they are not readily available in Australia. Always up for a challenge I dived into recipe research. I consulted recipe books (primarily the Joy…

Christmas Morning Muffins

As Christmas draws near again, I have the pleasure of re-visiting my Christmas cook books, including Nigella Lawson’s Nigella Christmas. In an attempt to spread my (admittedly premature) Christmas cheer, I’ve chosen to make these Christmas Morning Muffins, which Nigella recommends as a lighter way to celebrate Christmas morning. Frankly, there aren’t many mornings in the year where you could…
