tonight's low cost delish dish:
ROASTED GARLIC MAPLE BACON MUSHROOM CARBONARA 🤌🤌🤌
managed to make three servings of meaty pasta (with left over ingredients for three more) for under $16
500g ground chicken - ON SALE $2.50
12 button mushrooms - $4.00
1 pack of maple bacon - ON SALE $4.99
1 bottle of roasted garlic alfredo sauce - $4.00
1 box of pasta shells - FREE from the food bank
Low effort recipe under the cut.
I just wanted to make three servings, so adjust amounts as need be
- put 5 cups of water in a medium sized pot to boil on the backburner while you tackle the prep
- take 5 slices of bacon. cut bacon into small pieces, roughly 2cm, put in frying pan at medium-high heat.
- once the bacon has released its grease, dump the whole pack of ground chicken in there, separating it as it cooks.
- dice 4 button mushrooms as the meat cooks. get really distracted by this as you try to cut them into uniform pieces.
Optional: get partner to cook the meat because even though it's delicious it still looks bad and ruins my appetite. also a good time to bag up and date the leftover ingredients.
- pour half the box of pasta shells in the water that has probably boiled by now. no measurements on this one, pour with your heart.
- when the meat is mostly cooked, drain the grease off the meat in a strainer.
-add 1 tbsp of olive oil to the frying pan and saute the diced mushrooms.
- reintroduce the meat. season the lot of it with garlic powder, onion powder, Italian herb mix, generously.
- push the meat and mush around until it is all nicely browned and seasoned evenly.
- remove from heat, turn down the burner to medium low.
- find something useful to do while the pasta cooks.
- strain the pasta, save a bit of the pasta water, put aside in a small bowl. (place strainer over pot and strain only the water out)
- move the pasta pot to the low-heat burner (important)
- add roasted garlic alfredo sauce to the pasta, pour the leftover pasta water into the sauce bottle to swish the rest of the sauce stuck to the sides and pour into the pot (because you don't feel like scraping it out)
- stir the pasta and sauce as you add in the chicken/bacon/mushrooms, mix until everything is covered in the sauce. you don't have to do this for very long.
- you're done. serve and enjoy.
It's decadent, and I'm surprised that the maple flavor faded so much, it's really subtle and just adds to the creaminess. The garlic is the main character here. Also, this only took 30 minutes.

My partner and I are both having a very difficult time with mental health and employment, and we are struggling to pay our bills. Our landlord is planning to evict our other downstairs neighbor, and has heavily implied that we are likely next to get the boot. Unfortunately, we painfully still in the jaws of poverty, trying to stretch $543 biweekly into a budget and failing, and my partner's application for government assistance has gotten tied up in red tape due to the provincial government agency being overwhelmed. Both my partner and I have been looking for remote work (he has really bad sciatica and hasn't been able to get a primary doctor due to the doctor shortage here) without any luck. We are both still desperate for work, and I've been working with a career counselor for a few months, to no avail.
I know there are many such cases in this economy. We are living in a bedsit house, with many rotating tenants and little security. We've had our stuff stolen, the house is full of mold, and the landlord doesn't really care as long as the rent comes in. Well unfortunately, despite being his only reliable tenants, the landlord is souring on us because we are in a shitty financial situation.

it does still make me insane specifically how many queer people lovingly embrace astrology. I went to a poetry workshop yesterday that was genuinely quite good but also included an option to disclose astrology designations during introductions and so many people broke out some variation of "I'm a [x] sum but I have a [y] placement and it SHOWS" girl no it doesn't. that's meaningless correlation you completely invented the causation
