‘Burfi’ is a type of traditional Indian sweet that is eaten on days of celebration, and hazelnut + chocolate is my all time favourite flavour combination. So, I thought of combining western flavours with this traditional Indian sweet, and also make it vegan! This is a 5 ingredient hazelnut chocolate burfi recipe that’s as easy to make as it’s delicious.

- 2,5 frozen bananas
- 20g protein powder (I used nutritionplus.de 3k protein vanilla)
- 150ml oat milk
- 1-2 tsp peanut butter

Cilantro Lime Quinoa
Blend up cilantro, green onion, garlic, lime juice, water and salt to taste. Stir it into your cooked quinoa or rice.
Cilantro Lime Quinoa, Black Bean and Corn Salad
Add drained and rinsed black beans, corn, cucumbers, radish, roasted bell peppers, sliced green onion, red onion to the cooked Cilantro Lime Quinoa. Toss.
Cilantro Lime Dipping Sauce
Same as above, but add a half of an avocado or a whole one.
Mushroom Carnitas
Marinate for 15 minutes, sliced mushrooms and red onion in orange juice, lime juice, soy sauce, S&P, cumin, oregano and paprika. Cook in a hot skillet. Flip when they brown on one side and then flip them over to brown on the other side. Add a little water if they start to stick. Once done, splash with a little apple cider vinegar.
Tacos
Add all of the above to a toasted corn tortilla (toasted mine over my gas stove flame). Also add roasted poblano pepper. Roasted the peppers over the flame as well, no need to heat up the oven.
Dollop w/ Cilantro Lime and/or Cashew Ranch Dipping Sauce.
Enjoy.

I was feeling Christmassy last night and made this delicious MINCE PIE MUG CAKE 🤶☃️
It was honestly so good, I will definitely be making this again. So easy too, it just uses 5 ingredients and 1 spoon!
Add to a large mug, 3 tbsp self raising flour, 2 tbsp sugar, 1 tbsp oil, 3 tbsp non dairy milk (or enough to make a cake batter consistency), 1 tbsp sultanas and 1 spoonful of mincemeat in the middle. Microwave for 2-3 minutes until set!
