“Chemically, gut microbes and the brain actually speak the same language. The microbiome churns out the mood-influencing neurotransmitters serotonin, norepinephrine and dopamine. Bacteria can also change how the central nervous system uses these chemicals. Cryan calls microbes in the gut “little factories for producing lots of different neuro­active substances.” (excerpt from article in link)
My commentary: Unbelievable. This fact has a lot of limitless potential. My hypothesis: If one ingests the proper prebiotic (food) for the bacteria which produces the appropriate neurotransmitter for the feeling were are trying to illicit. Then it should affect our disposition because they can generate the transmitters. Rather than taking a pill to do it for us so our body stops producing it. 
This starts to shift the focus away from probiotics themselves and to how to feed out microbiome to keep it healthy and balanced. Optimize our performance. I do not want to get ahead of myself. But this has piqued my own curiosity as to how to hone this information before the pharmaceutical companies, patent it and make unavailable to us. 
“We usually give up our power pretty quickly in this conversation,” Tillisch says. “We say, ‘Oh, we’re at the mercy of the bacteria that we got from our mothers when we were born and the antibiotics we got at the pediatrician’s office.’ ” But our microbes aren’t our destiny, she says. “We can mess with them too.” (excerpt)
My commentary: This is second part of how a probiotic (bacteria) works. They cannot function without what they need. Nutrition is equally as important as the colonization of micro biome. Milk and dairy products are loaded with prebiotics as well as probitics. (It also why we need milk. so we can continue to feed our microbiome.)
Prebiotics defined: are substances that induce the growth or activity of microorganisms (e.g., bacteria and fungi) that contribute to the well-being of their host.
We need 6 g of prebiotic fiber daily.
Examples:
1. Acacia or Gum Arabic is probably the most underestimated food and beverage additive. It has the highest amount of soluble fibers available and packed full of amino acids. 85% prebiotics available by weight.
2. Raw, Dry Chicory Root 64.6%
3. Raw, Dry Jerusalem Artichoke 31.5%
4. Raw, Dry Dandelion Greens 24.3%
5. Raw, Dry Garlic  17.5% 6. Raw, Dry Leek   11.7% 7. Raw, Dry Onion     8.6% 8. Raw Asparagus     5% 9. Raw Wheat bran     5% 10. Whole Wheat flour, Cooked      4.8% 11. Raw Banana      1%

We’ve been taught all our lives that germs are the enemies. Take antibiotics, use antibacterial soap, hand sanitizer, every thing about the way we have evolved has been teaching us to kill what we need the most. 
Which is why they are mutating faster than we can kill them. It’s called survival. They were here before we were they will be here long after. It never ceases to amaze me how our own bodies mimic the same metabolic functions the micro organisms do. This really is the new frontier for medicine. 
Time to throw out every thing we thought we new about how our immune system and bodies. We are not alone. We are hosts. Because we will perish before they will. Everything in life always comes bavk full circle. no matter how advanced we seem to be. The answer is always right in front of us. In the one corner we weren’t looking. I’m excited to follow the developments.

The truth about plastic
The truth about Plastic….
PET (Polyethylene terephthalate) is the most common type of plastic bottle.  PE (polyethylene), PP (polyproplyene),  and PVC (polyvinyl chloride) are the next most commonly made plastic containers for food and beverage. These are thermoplastic polymer resins.
PET is made by the esterification  reaction between ethylene glycol (an alcohol) and  terephthalic acid  (carboxylic acid). An easily reversible reaction called hydrolysis. The addition of water in the presence of a catalyst (either acid or base.)  to the ester link will cause breaking apart of the ester into their parent carboxylic acid and alcohol.
This includes phosphoric acid, citric acid, acetic acid (vinegar) ascorbic acid etc. Which are common ingredients in soda, vinegar, and other food and beverage products.  IT will break down the bottles over time to the original alcohol and carboxylic acid.
Below is an excerpt from the MSDS of ethylene glycol and its toxicity. “The substance may be toxic to kidneys, liver, central nervous system (CNS). Repeated or prolonged exposure to the substance can produce target organs damage. Repeated exposure to a highly toxic material may produce general deterioration of health by an accumulation in one or many human organs.”
From the MSDS of  terephthalic acid “The substance is toxic to blood, kidneys, liver, bladder, brain, cardiovascular system, eyes, Nutritional and Gross Metabolic, ears, nose/sinuses, throat. Repeated or prolonged exposure to the substance can produce target organs damage.”
ARE YOU KIDDING ME???? How is this stuff even legal? It takes a drop of concentrated sulfuric acid to catalyze the esterfication reaction initially. It doesn’t take much more than that to reverse it. Fact is, plastic will kill you! They will ban smoking because of second hand smoke but poison us slowly through packaging of food and beverages   instead. Since it happens over time, no one bothers to notice that practically everything one buys at the grocery store is packaged within poison. Think about the effect this has on us over the span of 10 years? 20 years? 30 years? 40 years?
If that isn’t bad enough the reaction between sodium benzoate and ascorbic acid make benzene. I’ve tested this at home with lemon juice and sodium benzoate. It’s true. It does. It’s not a large amount at once. Over time benzene exposure will lead to cancer. It’s the accumulated effect that’s troublesome.
Teflon (Polytetrafluoroethylene) PTFE is the one exception of the polymer resin plastics due to the high electron negativity of fluorine. Is hydrophobic. (water won’t permeate it.)   In layman’s the reaction is not easily reversible. Think of fluorine as a greedy crab that refuses to let go of the bait even if it means death. The only chemicals known to affect these carbon-fluorine bonds are highly reactive metals like the alkali metals, (pure sodium, potassium, not the salts of. Which can not be found in their elemental state in nature due to their reactivity.) At higher temperatures such metals as aluminum and magnesium, and fluorinating agents such asxenon difluoride and cobalt(III) fluoride. None of which you will find in food.
Side note about aluminum. What about teflon coated aluminum pans? Is this is reason the coating degrades over time exposing the metal? My educated guess is yes. Something to explore further at a later date.
This is why you should NEVER use plastic to ferment in. As well as avoid it at all costs. I’d rather filter or distill my own water than buy it in plastic bottles. I knew that plastic was bad for you. I didn’t realize myself it was this awful until I researched to write this blog and verify my claims. This raises a whole multitude of questions which I didn’t have before today. How to detoxify my body and how to repair the damage done.

I am happy to see that major companies are starting to invest in researching the effect our gut bacteria have on our immune system. Immunologists believe that there is an important connection there.  Companies such as Nestle, Johnson and Johnson, are investing in this research. 
Since one can ferment and brew kombucha at home for about 50 cents a gallon it did not benefit them financially to do so. The bacteria they are focused is Bifidobacterium, 
Bifidobacteria belong to a group of bacteria called lactic acid bacteria. Lactic acid bacteria are found in fermented foods like yogurt and cheese. They are naturally occurring in the gut. This bacteria not only produces lactic acid, but acetic and butyric acid as well. 
All three of which can be found in kombucha. Ironic???
