Ingredients: 2 cups raw almonds, soaked overnight. 1 cup dates, pitted. 1/2 cup maple syrup. 1/2 cup coconut oil, melted. 1/4 cup almond butter. 1/4 cup coconut cream. 1 tsp vanilla extract. 1/2 tsp sea salt. 1/2 cup coconut sugar. 1/4 cup water. 1/2 tsp lemon juice.
Instructions: Preheat oven to 350F 175C. Drain soaked almonds and blend them with dates, maple syrup, melted coconut oil, almond butter, coconut cream, vanilla extract, and sea salt until smooth. Press the almond mixture into the base of a lined cake tin. Bake for 10-12 minutes until lightly golden, then remove from oven and allow to cool. In a saucepan, combine coconut sugar, water, and lemon juice. Cook over medium heat until sugar dissolves, then simmer without stirring for 5-7 minutes until the mixture thickens slightly. Pour the caramel sauce over the cooled almond base. Refrigerate for at least 4 hours or until set. Slice and serve chilled. Enjoy!

Instructions: Follow the directions on the package to cook the pasta until it is al dente. Remove the water and set it aside. Warm up the olive oil in a big pan over medium-low heat. Cook for one to two minutes, until the garlic smells good, after adding it. Put chopped prosciutto in the pan and cook for three to four minutes, until it gets a little crispy. Mix the cooked pasta with the arugula and feta cheese that has been broken up. Mix it all together until the arugula gets a little limp and the feta starts to melt. You can add red pepper flakes, salt, and pepper to taste. Sprinkle to mix. Enjoy while hot!

After the oven is hot, bake the patties for 20 to 25 minutes, or until the edges are golden brown and the patties are firm. For a tasty and healthy meal, serve the baked quinoa patties in a burger bun or with your favorite dipping sauce.

Ingredients: 2 Everything bagel cauliflower buns. 2 cauliflower patties see separate recipe below. 2 slices of vegan cheese optional. 1/4 cup of sliced red onions. 1/4 cup of baby spinach leaves. 2 tablespoons of vegan cream cheese. 2 tablespoons of vegan mayonnaise. 1 teaspoon of black sesame seeds. 1 teaspoon of white sesame seeds. Salt and pepper to taste.
Instructions: Follow the separate recipe below to make the cauliflower patties. Toast the everything bagel cauliflower buns in the oven or toaster until they are just a little crispy while the patties are cooking. The vegan cream cheese and vegan mayonnaise should be mixed well in a small bowl. Add pepper and salt to taste. Cover the bottom half of each cauliflower bun with the cream cheese mixture. Add a cauliflower patty to each bun and cover it with cream cheese. If you want, you can put a slice of vegan cheese on top of each patty and let it melt a bit. Instructions: Follow the directions on the package to cook the linguine until it is al dente. Drain the pasta and set it aside. Save a cup of the pasta water. Warm up the olive oil in a big pan over medium-low heat. Add the minced garlic and cook for about one minute, until the garlic smells good. Put mushrooms slices in the pan and cook them for about 5 to 7 minutes, until they start to give off their juices and turn golden brown. Add fresh thyme leaves, lemon zest, and lemon juice and mix well. Add pepper and salt to taste. Toss the cooked linguine in the mushroom mixture after adding it to the pan. If the pasta looks dry, add a little of the pasta water you saved. If you want, you can serve it hot with grated Parmesan cheese and extra thyme leaves on top.

Ingredients: 1 cup all-purpose flour. 1/3 cup cocoa powder. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 2/3 cup granulated sugar. 1 large egg, separated. 2 tablespoons milk. 1 teaspoon vanilla extract. 1 cup finely chopped nuts walnuts, pecans, or almonds. 1/3 cup fruit jam raspberry, strawberry, or apricot.
Instructions: Preheat the oven to 350F 175C. Line a baking sheet with parchment paper. In a bowl, whisk together the flour, cocoa powder, and salt. In a separate bowl, beat the softened butter and 1/3 cup of granulated sugar until creamy. Add the egg yolk reserve the egg white and vanilla extract to the butter mixture. Mix well. Gradually add the dry ingredient mixture to the wet ingredients, mixing until combined. In a small bowl, whisk the egg white with 2 tablespoons of milk. Shape the cookie dough into 1-inch balls. Dip each ball into the egg white mixture and then roll it in the finely chopped nuts. Place the coated cookie balls on the prepared baking sheet, leaving some space between each. Use your thumb or the back of a spoon to create an indentation in the center of each cookie. Bake the cookies in the preheated oven for about 10-12 minutes. Remove the cookies from the oven and gently press down the center indentation again with the back of a spoon, if needed. Allow the cookies to cool for a few minutes on the baking sheet, then transfer them to a wire rack to cool completely. Once the cookies are cooled, spoon a small amount of fruit jam into the center indentation of each cookie. Let the jam set for a while before serving or storing.
