So I’m not rushing you ofc (just still think about it and look forward to when you’re able to continue), but for Heart of the Sea— Bard witnesses Sebastian in “human” form. He obviously has some gut feeling that Sebastian isn’t quite “normal,” but I was curious if Sebastian has a non-human form as well?
If this is too much of a spoiler that’s ok, but if it isn’t, could you tells ha about it?

Yes, much like in the canon story, the human form Bard sees is simply a disguise to hide Sebastian's less...palatable form.
As for Sebastian's true form, it looks something like this. (Here is a link to the artist's original post about this piece)

The main difference between this art and how I envision Sebastian's form is the scales begin around navel height and travel down his tail, which has a base color of black, but gives off a dark blue and green sheen when the light catches it just right. His skin tone also has a hint of grey to it. His hands have elongated nails like claws, which are black. He has fangs. And his eyes are completely black like in the artwork, but his eyelids work more like a reptile than a human.
Also, another small little nugget...we are going to see this form at some point in the story.

So I’m assuming that Sarah won’t agree to be Sebastian’s mate until she finds out and comes to terms with him being a demon, correct? Oof.
I’m also assuming that Sebastian won’t (can’t?) make her his mate against his will... I can’t imagine he would take kindly to her rejecting him, even if it’s temporary, seeing how possessive of her he is (understandably, due to her precariously dangerous position)...
(Btw if this is too spoilery of an ask you don’t have to answer or can just be coy... I’ve just been thinking about this a lot lately, between re-reading and the recent update.)

I don't think this is too "spoilery", so in answer to your questions...
1. Yes, Sarah will have to come to terms with and accept that Sebastian is a demon before she will mate with him. It will take a bit for her to come around once she finds out what he really is. As you suspected, Sebastian will be infuriated with this development and massive step backward because he will have to try that much harder to win her back.
2. As for the second part of your question, you are correct- Sebastian will need Sarah's consent in order to mate with her. After some searching, I found a section in WG where Sebastian mentions this in his inner thoughts.
"I watched the gradual rise and fall of the blanket as she continued to slumber, completely oblivious to what had almost transpired moments before. As I continued to watch on, the realization that I could not claim her without her consent settled in. There was one great difference between human and demon mates and that was that a simple copulation was not the only thing necessary for the mating process to be completed. But rather, both demon and human needed to mark the other as their own, something that required consent from both parties. In the past I had been able to force the issue with the few human mates I had previously, but I knew Sarah would not be so easy to persuade. She was not the type of woman to be coerced or seduced into doing something she did not have the mind to do…something that, at the moment, was proving to be rather wearisome." The turnspit dog breed

So I’m a dog breed geek, OK? When I was a kid, I had a book on dog breeds and I read it over and over until I memorized it.
Normally, if you describe a dog, I can tell you the breed, and I’m right most of the time.
So I ofc had to look this up and read more about it. I was aware of the concept of using dogs to keep the rotisserie running before electricity, but I didn’t know that much about the breed itself, so I decided to do a little research.
The Canis vertigus, or turnspit, was an essential part of every large kitchen in Britain in the 16th century.
In fact, the breed was even mentioned in the first book on dog breeds (in English). They were used from the late 1500s into the 1900s, and eventually went extinct.
They were “mutts,” small dogs with long bodies and short legs who could fit in the wheels that turned the spits to ensure the meat cooked evenly.
There is a taxidermied specimen of the breed (a dog named Whiskey) that looks a lot like the dog Sebastian is holding in the ch 178 cover:

Turnspit dogs were viewed as kitchen utensils, as pieces of machinery rather than as dogs.
The roar of the fire. The clanking of the spit. The patter from the little dog's feet. The wheels were put up quite high on the wall, far from the fire in order for the dogs not to overheat and faint.
To train the dog to run faster, a glowing coal was thrown into the wheel.

They were given Sundays “off” to accompany the household to church, but they still had a job: a foot warmer.
Apparently, part of why they went extinct when their jobs disappeared was no one wanted to keep them as pets:
They were ugly little dogs with a quite morose disposition.
Not that Bard is ugly, but the morose disposition does kinda fit. Not to mention how Sebastian sees him—a lowly mongrel he can use as a tool if he’s able to train him just right.

This Saturday I wanted to highlight a fic I know a lot of people have probably overlooked since it isn’t sebaciel and has an OC as the MC.
But I really do recommend it. If you enjoy “downstairs” life of the servants, and also the undercover and other missions for the Queen that we haven’t really seen in the manga as much lately, you will enjoy this fic.
Not to mention how sensual @wicked-game-black-butler writes Sebastian!!
Take this little sample from the most recent chapter (no spoilers I promise):
The silk of the sleeves brushed up my arms as Sebastian guided the garment onto my frame with measured intent. I looked forward, hazel meeting russet in the mirror's reflection, a mutual fire smoldering in both gazes. My heart thudded against my ribcage when his chest pressed into my back, his hands trailing around my waist to pull the two sides of the bodice together.
“May I also make a request?” He whispered against my ear.
“Yes.”
Slowly, his long fingers worked each button into place, my skin heating beneath his touch and gaze.
“Given the concerns for your honor, may I finish my congratulations later this evening?”
My breath hitched as his fingers brushed over the swell of my breasts, answer caught in my throat when they trailed up to my collarbone before descending again.
I swallowed, moving my hands behind my back, reaching to drag my fingers along the seam of his trousers. Sebastian huffed, composure momentarily faltering when they grazed against the length of his half-hardened arousal.
Turning my head, I brushed my nose against his neck, purring, “You may, if I’m inclined to be so generous.”
A strangled groan escaped his plush lips when I gave his cock a gentle squeeze before returning to a more normal stance.
After a brief moment, Sebastian returned to the task at hand, buttons done with the same teasing pace as before. I waited, knowing my challenge wouldn’t go unanswered, my breath becoming shallow with anticipation when he made it to the high collar.
His fingers delicately guided my chin upward before tugging the sides of the collar into place- just a shade too tightly. My heart leapt in my chest, arousal pulsing between my legs as my gaze met his once more.
“Well then, I shall do everything I can to earn my lady’s approval.”
I honestly have always had problems relating to female characters, but Sarah is a well rounded and sympathetic lead, and watching her relationship with Sebastian blossom (especially in light of her past) keeps you reading. (And their missions together are tons of fun.)
Definitely worth reading. I haven’t read anything else like it in the fandom.

Do you ever think you'll stop drawing fanart? No offense it just seems like the kind of thing you're supposed to grow out of. I'm just curious what your plans/goals are since it isn't exactly an art form that people take seriously.
Ah, fanart. Also known as the art that girls make.
Sad, immature girls no one takes seriously. Girls who are taught that it’s shameful to be excited or passionate about anything, that it’s pathetic to gush about what attracts them, that it’s wrong to be a geek, that they should feel embarrassed about having a crush, that they’re not allowed to gaze or stare or wish or desire. Girls who need to grow out of it.
That’s the art you mean, right?
Because in my experience, when grown men make it, nobody calls it fanart. They just call it art. And everyone takes it very seriously.
