Creamy roasted garlic tomato soup

Yields: 4-6 servings Prep Time: 15 minutes Cook Time: 45-50 minutes

Ingredients

Roasted Veggies:

3 pounds ripe tomatoes (Roma or on-the-vine work well)

1 head garlic (top sliced off)

1 medium onion, quartered

3 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

Soup Base:

2 tablespoons butter

1 teaspoon dried thyme (or 2 sprigs fresh)

1/2 cup heavy cream

4 cups vegetable broth (low-sodium is best)

1/4 cup fresh basil leaves (optional, for garnish)

Equipment:

Baking sheet

Large pot or Dutch oven

Immersion blender (or regular blender)

Instructions

Roast the Vegetables:

Preheat your oven to 425°F (220°C).

Cut tomatoes in half lengthwise. Drizzle tomatoes, onion, and the garlic head with olive oil, salt, and pepper. Place them on a baking sheet, cut-side down.

Roast for 35-40 minutes, or until tomatoes are blistered and softened.

Start the Soup Base:

While the veggies roast, melt the butter in a large pot over medium heat. Add the thyme and cook for 30 seconds, stirring constantly.

Blend the Soup:

Carefully squeeze the roasted garlic cloves out of their skins and into the pot with the melted butter. Add the roasted tomatoes and onions (including any juices).

Pour in the vegetable broth. Bring to a simmer and cook for about 10 minutes.

Use an immersion blender (or carefully transfer to a regular blender in batches) to puree until very smooth.

Finish and Season:

Stir in the heavy cream. Taste and adjust salt and pepper as needed.

Serve:

Ladle into bowls and garnish with fresh basil if desired. Enjoy with crusty bread, grilled cheese, or a simple salad for a delicious meal!

Tips & Variations:

Spice it up: Add a pinch of red pepper flakes with the thyme for a little kick.

Vegan: Swap the butter for olive oil and use a plant-based cream alternative.

Extra Flavor: Add a tablespoon of tomato paste while cooking the thyme for deeper tomato flavor.

Storage: This soup keeps well in the refrigerator for 3-4 days and freezes beautifully.

Firstly, sorry you can barely see the card, i wanted to flex that I can still take a good moon pic, despite not doing so since 2018.

Secondly, this card is a card of strain, grief, loss, and disconnect when in reverse. A good time could be overshadowed by the fog in your head (a situation i find myself in often), a celebration may be cancelled due to a falling out, you may be feeling extra stressed or tense today, maybe your grief and sadness is a little heavier than it was yesterday. And all of that’s okay. We cannot be happy all the time, we are allowed low moments, and low days. Let today be a self care today. For some of you (specifically one of you in particular…), this can also indicate the end of a friendship, or the motions being taken today to step away from negativity in your life.

Today marks the celebration of the Feast of the Apostles Philip and James. During Mass, we are reminded that the lives of the Apostles serve as a clear guide to reaching heaven. Despite enduring suffering and persecution, they steadfastly trusted in God, now finding joy in heaven. Similarly, we are urged to maintain our faith in God amidst challenges. Just as there are many dwelling places in our Father's house, if we follow the path illuminated by Christ, He will welcome us into His presence when our earthly journey concludes.

Propers for the Feast Day of St. Stanislaus, Bishop and Martyr

Kind of late, but last minute is better than not posted at all!

St. Stanislaus was the Archbishop of Krakow a little over a century after the Baptism of Poland. Little is known about him outside of his martyrdom under the Polish King Bolesław II, as from all accounts I see, his life story was told well after his death, but we at least know a little. Likely born to a wealthy southern Polish family, his early life was marked by his parents' devotion and seeing him as a gift, and he became a devout young man himself, entering the priesthood and being ordained as a bishop at forty-two.

As bishop, he would confront the immorality of his day in homilies and even direct confrontation with the king. After some time of warning the King regarding his lustful and cruel ways, he was forced to excommunicate him. The King held a mock trial for him, found him guilty of treason for disrespecting him, and slew Bishop Stanislaus with his own sword while he was celebrating Mass.

According to legend, he King ordered he be dismembered, and his body scattered to the wild beasts, but eagles defended his body parts from the ordered soldiers until the canons at the cathedral could inter him. Bolesław II would go on to flee to Hungary after public outcry and die an unhappy death.

He also has a miracle associated with him. He rose a man from the grave, ending a dispute regarding a donation of property to the Church between the Church and the sons of the deceased.

A truly blessed man. As much as I don't like JPII, I think I must agree with him in this case regarding this man, he was Poland's Confirmation. My church has a statue of him I'm quite proud of that.

St. Stanislaus, prince of the Church, guiding shepherd of Krakow and Poland to this day, defender of moral order, patron of soldiers in battle, pray for us. Pray for Poland as she continues to champion the kingship of Christ, and pray for the Church that we might be have good bishops to restore the Church from the ravages of secularism. St. Stanislaus, bearer of the red crown of martyrdom, spiritual soldier in the white-robed army of Christ, pray for us with your most powerful intercession.
