Salatet Fassouliah, Butter Beans salad so simple to make and so good 😊 butter beans are rich in vitamins and minerals. This is a vegetarian and vegan recipe. I always use the dried butter beans or even better the fresh ones when in season. For this salad you need boiled one cup of butter beans, 1 clove of garlic crushed with salt, juice of 1 lemon, a few sprigs of parsley, a drizzle of extra Virgin Olive oil, taste and adjust seasoning to your preference. Sayadieh/ the fisherman’s catch is a fish and rice dish. The most important part of this dish is the fish. Finding two fresh monkfish tails at my fishmonger on Saturday, I knew I had to make this dish for our family Sunday lunch. Sayadieh is quite versatile can be prepared using different types of fish. I love to use monkfish, for it has a mild, sweet flavour and firm meaty texture. Sayadieh is a great dish for gatherings and parties a good dish for sharing. I always serve it with two sauces, a Tahini sauce seasoned with lemon and garlic, and the dish’s own sauce. It’s time to make my mum’s shredded quince jam. Homemade quince jam is So delicious and simple to make without using any preservative or thickener. Quince jam matches perfectly with marbled cheeses such as Stilton, Roquefort, and fresh goats cheese. It also goes very well with goats Labneh. Chefs have been pairing it with white meats like chicken and turkey and even with duck. For me it was the preferred jam at the breakfast table. I score Lebanese food high on my healthy eats. My favourite Lebanese restaurant is Amoul’s Hideaway. Owner and glamorous head chef Amoul has built a great reputation for her restaurant by serving the finest, traditional, home-cooked Lebanese food. Amoul’s Hideaway is one of the most chilled out restaurants I have visited in London. It’s got a homely feel and an incredibly relaxed atmosphere – so much so, that you almost feel like you are being hugged all over with it. The café-style restaurant has a bohemian look about it, and the walls are adorned with interesting photography, glowing critic reviews from fashion and food magazines, artwork and paintings. Rustic tables are lit up with candles and atmospheric mood lighting. Amoul’s food may appear rustic and simple, but its quality is exceptional. She is obsessed by using only the best ingredients for her cooking and has all her vegetables delivered from the local market daily. Amoul also visits the meat market twice a week to personally choose all the meat for her dishes. She minces all the lamb only using leg of lamb (a lot of restaurants buy mince in and that often means cheaper cuts of meat are used), as she says it is far leaner and better quality. The chicken and poussin are free range, and absolutely everything served to guests is prepared in her kitchen from scratch with no preservatives or additives ever used. Extra virgin olive oil dresses all salads and rapeseed oil is used for cooking (this is a healthy oil and good for cooking in high temperatures). To give her guests the best authentic Lebanese food experience, Amoul uses the recipes from her family in Lebanon that were passed down to her mother from many generations of aunties, grandmothers and cousins who loved to cook the very same dishes. Freeka with figs, goats Labneh and caramelised onions. Figs are in season now, found some Lebanese ones in the market so it inspired me to make this dish, which was a regular at Amoul’s though I used to prepare it using Bulgarian feta cheese which is similar in taste to goats Labneh. Caramelised Apple Tart. Bramley 🍏 covered with caramelised sugar and a layer of homemade pastry. Eggs, melted butter, and flour. A favourite at Amoul’s, which I have not done at home for a long while, a recipe given to me by my sister Victoria. Bramley apples are the cook’s favourite in the Uk for their sharp taste and firm texture. According to Mike @bitaboutbritain “the mother of all Bramleys was grown from pip of unknown variety planted by a little girl more than two centuries ago, pollinated by the right kind of bees, who had visited the right kind of apple blossom along the way, and nurtured in the good soul and temperate climate of the English Midlands.” Thank you Mary Ann Brailsford! for this contribution! It’s Friday! Time for Mjadara Hamra/ or red Mjadara. A Burghul and lentil Mjadara originally a southern Lebanese dish. A very tasty vegetarian and vegan dish enjoyed with a Lebanese mixed salad seasoned with lemon and extra virgin olive oil. Cook one cup of brown lentils in a pot with 2 cups of water for 15 minutes, add 1/2 cup of coarse brown Burghul, and 1/2 a cup of water and salt to taste simmer over medium heat. Dice an onion and caramelise in two tablespoons of oil until dark brown in colour, add two tablespoons of water and let the colour infuse, add this onion mix to the lentils. This is what gives the Mjadara it’s dark red colour and hence it’s name. Please try it!
