No bake cookies - cooking journal
Recipe
I like these things, so I make it a lot.
I got this recipe from TikTok, originally, but I did paste it in my cookbook and forgot the website. I also don’t have TikTok anymore, so I can’t find the video. It was from a few years ago. Well, no use crying over spilled milk, I guess. I also added some things, like the dairy free version.
My family used all the butter in the house, luckily I had my dairy free version. I made before it to accommodate my roommate during a Christmas party and she was allergic to a lot of major ingredients (dairy, gluten, and eggs). Although, I did not replace milk, as I don’t need to. (For my roommate I borrowed some of her milk, with her permission of course. I think it was almond milk? Maybe rice? I’m not quite sure.)
I’m a bit clumsy, I spilled the cocoa powder all over myself :( this is why I have to wear an apron, or else I’d have food all over me. It gets very chaotic very quickly, especially when the recipe is more complex or uses flour (it looks like a snow day with flour. I don’t know how I do it)

I also spilled the oats.

Overall, this recipe is pretty easy and quick, and very tasty as well.

I do not have a cookie sheet right now, as we’re in the middle of a move. I used plates instead.

Chilled them as I worked on the journal, and everyone was very curious about what I was making.

The drizzle never cooperates with me. I only did it on half of the cookies. I then proceeded to eat four of them, because hey, they’re good and I made them to be eaten.

No bake cookies

ingredients
1/2 cup butter (for a dairy free version of this recipe, use six tablespoons of oil)
1 1/2 cups brown sugar (light or dark)
1/2 cup milk (for a dairy free version of this recipe, replace milk with your favorite milk substitute)
1/4 cup cocoa powder
3 1/2 cups rolled oats (quick oats are fine too)
2/3 cup creamy peanut butter
1 tsp vanilla extract
pinch of salt
instructions
Start by adding the butter, brown sugar, cocoa powder, and milk to a pan over medium heat. Stir to combine the mixture, then continue to stir as it comes to a boil. Let the mixture boil for at least 1 minute, but no longer than 2 minutes. Remove the pan from the heat.
Add the rolled oats, peanut butter, vanilla extract, and salt. Stir until the peanut butter has melted and the mixture is well combined. Let the mixture cool for 5 minutes.
Use a 1/4 cup cookie scoop and scoop out the mixture onto a cookie sheet lined with parchment paper. Transfer to the fridge for 20 minutes to fully set up.
Adding the topping is optional, but I highly recommend it! Add a spoonful of creamy peanut butter to a bowl and microwave for 20-40 seconds, until it is smooth and creamy. Drizzle the peanut butter on top of each cookie and a pinch of flaky salt. Enjoy!
Keep extra cookies in a sealable container. No need to store in the fridge, but you can if you want.

Intro post!
This is my baking side blog! I will mainly be focusing on desserts, but there will be other types of dishes that pop up occasionally. I am by no means a professional baker, and I’m not the best cook, so this is all in good fun! This is so I can experiment and progress in my baking skills!
There will be three posts per dish: the recipe, a journal of my experience baking, and an ~aesthetic~ video. It will mostly be one recipe per week, but rare occasions will come when I post more.
