One-bowl banana cake with cream cheese icing

This easy one-bowl cake is topped with a delicious lemon-infused cream cheese frosting. Slice it up an enjoy for a birthday or afternoon tea treat or pack into lunch boxes for a sweet surprise (leave off the walnuts for children).
You can freeze the uniced cake for up to 3 months.
Simply wrap in plastic wrap, then foil and place in a snaplock bag - this will help to prevent freezer burn.
Thaw at room temperature before icing.

Ingredients
185 g butter
3/4 cup CSR Caster Sugar
3 eggs
1 tsp vanilla extract
1 3/4 cup self-raising flour
3 bananas
1 tsp ground cinnamon
125 g cream cheese
40 g butter
1 1/2 cup CSR Soft Icing Mixture
1/2 tsp lemon rind
Roughly chopped walnuts, to decorate
Method
1) Preheat oven to 180C. Grease an 11cm x 21cm loaf pan. Line base and sides with baking paper.
2) Place butter and sugar into the bowl of an electric mixer. Beat until pale creamy. Add eggs one at a time until well incorporated. Add vanilla, mixing well.
3) Fold in flour, banana and cinnamon until batter is smooth. Pour into prepared pan. Bake for 50 minutes or until an inserted skewer comes out clean. Cool in tray for 5 minutes before transferring to a cooling rack.
4)For the frosting, place cream cheese and butter in the bowl of an electric mixer. Beat until smooth. Gradually add icing sugar until well combined then fold in the lemon rind. Spread cooled cake with frosting.
Notes
Cake can also be cooked in a round cake tin, although you may need to increase cooking
You can add some extra chopped walnuts through the batter before baking to add some delicious crunch to the cake.
