Enjoy it at home or on the go!
Ingredients: 2 cups cauliflower rice. 1 cup diced cucumber. 1 cup diced bell peppers. 1/2 cup cherry tomatoes, halved. 1/4 cup diced red onion. 1/4 cup sliced black olives. 1/4 cup crumbled feta cheese optional. 2 tablespoons olive oil. 1 tablespoon lemon juice. 1 teaspoon dried oregano. Salt and pepper, to taste.
Instructions: Put the cauliflower rice, diced bell peppers and cucumber, cherry tomatoes, red onion, black olives, and feta cheese if using in a large bowl. Salt and pepper should be mixed with the olive oil, lemon juice, dried oregano, and salt in a small bowl. Add the dressing to the vegetables and toss everything together until it's all covered. Put the veggie-packed mix into bowls for serving. You can eat it right away or put it in the fridge to enjoy later.
