What if the morphing tech didn't work on one if the original human animorphs?
Hmmm.  I think the outcome would depend on the human Animorph in question.
Cassie would slip pretty easily into a support role if she was a non-morpher who was nevertheless in the know.  I could see her supporting her friends in all kinds of ways (helping them get DNA) and being a lot better off for it.  There’s also a big advantage to be had if she’s not a morpher but the team still meets at her house, because then any potential leak around their meeting place wouldn’t necessarily lead back to the others.  If Cassie was a non-morpher, the team would function in a similar way and a lot of Cassie’s role within the series (especially around Aftran) would probably be similar.
Jake would try to stop anyone else from being an Animorph if he himself couldn’t, and he might even succeed with everyone but Tobias.  (I know Tobias actually likes Jake in the first book, but Tobias knows no gods, no kings, no masters, and especially no war-princes.)  In that scenario we’d see a situation like that one AniTV episode where Tobias tries to fight the entire war alone, and where Jake gets lured into joining the Sharing by Tom and then one by one recruits all of the others.  That episode ended with Tobias getting controller-ified following an attempt to save Rachel, but maybe if Ax managed to rescue himself then he and Tobias could form a two-person team instead.
Marco would be outwardly ecstatic, and would brag about not having to turn into a fly at every opportunity.  But secretly he’d worry, and deep down he’d be insecure about not being able to help more.  I could see him being the Guy in the Chair for everyone else on the team, doing online legwork with WAA accounts and hacking yeerk coms.  He’d complain constantly, of course, and would correct anyone who tried to describe him as an Animorph, but he’d also be an integral part of the team.
Tobias would do something horribly self-sacrificial to try and help the war effort.  I’m not 100% convinced there would be a war effort if Tobias couldn’t morph, given how much he drags the other four kicking and screaming into the plot.  But assuming he still managed to form the team, that Tobias tendency to want to take all the risk onto himself would probably come out.  I could see him becoming a voluntary controller to spy on the Sharing and/or work with the Yeerk Peace Movement.  I could see him going to live in the hork-bajir valley full-time as a human (assuming the Ellimist finds a different way to make that happen) to help Toby.  I could see him dying in battle as a human, or letting himself die in battle, much as I don’t want to.
Rachel would put on a mask, pick up a baseball bat, and go start kneecapping controllers.  As MM4 shows, girl does not need morphing to be a badass.

I’m not great at history, so I could be off-base here, but is there a way in which the Ellimist’s and Crayak’s refusal to fight directly and instead have smaller conflicts is a parallel to the Cold War and the proxy wars fought between the US and the USSR?
For basically as long as we've had global imperialism, we've had proxy wars [ETA: and the U.S. just got in another one. Fuck this, seriously. Fuck.] and there's clearly a lot of commentary on them throughout Animorphs. Like, it's no accident that in the dark alternate timeline of MM3, nazi!Jake is talking about wiping out the entire population of South America. That's a clear escalation of what was really happening in the 1990s — the U.S. was overthrowing governments and starting civil wars in South America in the hope of gaining more economic advantages there. And writings from the founding fathers have been transparent about the fact that they took so much territory (California, Texas, Missouri, later Hawaii) because they wanted to sell stuff to the people living there. That policy has continued more or less uninterrupted; the goal shifted to South America in the 1980s, and to western Asia in the 00s.
Anyway, KAA pulls no punches with the anti-imperialism commentary. And the way that the Ellimist and Crayak pussyfoot around admitting how much they manipulate the war is clearly part of that. Like, the Rwanda genocide occurred just over a year before the series started, and the U.S. tied itself in verbal knots not to use the word "genocide" — because the U.N. charter obligated them to intervene in cases of genocide, so if it was just attempted murder of an entire ethnic group as a legal act of war, then they could keep sending attack helicopters without risking any ground troops. If the Ellimist is just making suggestions then he doesn't have to intervene and Crayak doesn't get a counter-move. As Tobias says: "total bull."

It’s interesting how diseases rip through schools at incredible speeds despite being in an arguably modern, clean(ish) environment. I wonder if it has something to do with the whole “you need a doctor’s note to excuse your absence of even one day” combined with the average price of going to a doctor, the lack of education on things like “you’re still contagious even after the fever goes away”, and the overwhelming message of “if you don’t struggle through it, you’re a failure!”
