Leftover chicken chili (click for recipe)
Made in a crockpot with chicken, corn, black beans, white onion, crushed tomatoes, salsa, and seasoning mix
Pan-fried canned carrots
Spray a pan with cooking spray, add carrots, garlic powder, onion powder, and black pepper. Spray the top layer and cook on medium-high for about 15 minutes or until cooked to desired crispiness
Loaded baked sweet potato
Bake a sweet potato for about 35-45 minutes, depending on size.
At the same time, cook two slices of turkey bacon in a pan coated with cooking spray. Remove and blot off excess grease. Wait until dry and crumble. Add shelled edamame to the same pan and heat thoroughly.
Top with fat free sour cream, red onions, scallions, bacon crumbles, and edamame

I like to have eggs for breakfast most days because I find they help keep me full the longest. I usually like to mix it up with how I prepare them, but one lazy Sunday I decided to make a batch of egg muffins ahead of time to freeze for a quick grab-and-go breakfast.
My biggest mistake here was using paper wrappers. I’ve done it twice, one with and once without cooking spray, and it was a nightmare to peel either way. My roommate swears by using tinfoil wrappers, but next time I think I’ll nix the wrapper all together.
A serving size of these little guys is 3 muffins. To prepare, divide these ingredients among 3 muffins:
6 tablespoons egg substitute
Frozen chopped spinach (as much or little as you want)
1/8 cup reduced fat shredded cheese (I went with mozzarella here)
1 Jimmy Dean fully cooked turkey sausage, finely chopped
It comes out to about 120 calories, depending what type of egg substitute and cheese you use.
Bake at 400 degrees for about 20-25 minutes or until a toothpick comes out clean.

One of my favorite evening traditions is texting my mother whatever I've made for dinner and making her guess the ingredients. We've both adapted a very healthy lifestyle in the last few years, so it's our way of trading recipes and ideas back and forth.
This one is: Panko-breaded buffalo chicken breasts with fat free ranch dressing - All I did here was marinate the chicken breasts, which were trimmed of all fat and skin, in hot sauce. Then, I dipped it in a mix of panko bread crumbs, onion powder, garlic powder, and a little bit of parsley. I sprayed them with cooking spray and baked them for about 10 minutes on each side at 425 degrees. Fresh pan-fried butternut squash with sour cream - First, I steamed the butternut squash to make it a bit softer. Then, I coated a pan with cooking spray, tossed in the butternut squash, sprayed it with a little cooking spray, sprinkled some garlic powder, onion powder, and black pepper over it, and then pan fried until crispy. Salad with lettuce, onions, edamame, and creamy raspberry vinaigrette - I cut up some romaine and a red onion and tossed in about 1/4 cup of shelled edamame. I mixed Maple Groves Farm Sugar Free Raspberry Vinaigrette dressing (it's actually really good, despite being sugar free, and it's only 5 calories for 2 tablespoons) with about a tablespoon of fat free sour cream for a delicious creamy dressing.
