Lebanese food
stuffed dough with meat cooked in yogurt (شيش برك ) this meal is very traditional u only eat this at your grandma, please have fun 
   ingredients for the dough
2 cups flower 
1 1/2  cup water 
1/8 tsp salt 
1/4 tsp sugar
1/4 tsp baking powder
Ingredients for the stuffing:
1 big onion minced 
1/4 cup canola oil
2 cups ground beef 
salt, allspice
pin nuts
Ingredients for the yogurt:
3 cups yogurt
1 1/2 cup water
one egg
1 tsp vinegar
salt
corn starch
Preparation: 
First start preparing the dough, in a large bole mix the flower, salt, sugar, baking powder and water mix the ingredients all together and then kneed the dough for 5 min until it looks like a smooth dough set it aside and let it rest for about 30 min.
In the mean time start with the stuffing, suttee' the onion with the pine nuts and then add the meat, salt and allspice. Keep on cooking until the meat is done set it aside to cool off.
In a deep pot whisk the egg, salt, vinegar and then add the yogurt, whisk them good. Add the corn starch to the water stir good to dissolve the starch add them to the yogurt and mix. Start cooking them on low heat with non stop staring stay cooking and steering until they boil. 
Roll the dough very thin, and then cut it with a round cookie cuter medium size( as photo above), and start stuffing (as photo above) make sure you seal them good. Bake them for 7 min at 350 degrees when there done add them to the yogurt. Keep on cooking for 35 min. if you like you can serve it with rice.

Orca with oil (بامية بالزيت ) it a very nice and healthy vegetarian dish.
   Ingredients: serves 3-4
14 oz. orca(frozen or fresh)
1 ½ cup tomato  chopped
1 cup onion chopped
3 cloves garlic
1 cup tomato sauce
½ cup water
Olive oil, canola oil (1/4 cup each)
Salt, allspices
Preparation:
Preheat the oils and then add the orca sauté them for about 10 min. Add the onion, garlic, salt and allspices and keep on sautéing for another 5 min, add the tomato, tomato sauce and water. Cook for 15-20 min. thank you and please enjoy

Spring roll stuffed with cheese (رقائق محشوة بالجبن), very good side dish. Please enjoy cooking it.
   Ingredients: serves 5
Spring roll
½ cup low sodium fata cheese
½ cup mozzarella cheese
 ¼ cup Shredder cheese
1 tbsp. parmesan
2 tbsp. parsley
2 egg
Canola oil
Preparation:
 Mix the cheeses and the parsley with 1 egg. Start stuffing from the corner and roll; at the end brush a little bit of egg (it will keep the roll from opening when you deep fry). Preheat the oil for deep frying and fry them. Thank you and please enjoy.

Green bean with oil (لوبياء بالزيت )is a very healthy vegetarian dish. It’s very easy to cook, please enjoy.
    Ingredients: serves 4
1 pound green beans (frozen or fresh)
1big onion (chopped)
4 tomatoes (chopped)
3 cloves of garlic (minced)
Jalapeños(your choice)
Salt, allspice
 1 cup Water
1 can tomato sauce
Canola oil, olive oil  
Preparation:
  Mince the garlic and chop the onion, sauté them with canola oil and olive oil in a deep pot until it’s soft. Add the beans with salt, allspice and Jalapeños, stay sautéing for about 10 min and then add the tomatoes, water and tomato sauce bring to boil. Cover and let it simmer for about 20 to 25 min (when the beans is soft that mean it’s done). Thank you and please enjoy.

Pea stew (يخنة بازيلا) is a healthy warm dish, very easy to cook. Please enjoy cooking it.
  Ingredients: serves 4-5
16oz. frozen pea or fresh
½ pound meat (chunks)
5 cloves garlic
1 cup cilantro
3 tbsp. tomato past
1 small cane tomato sauce
Salt, allspices
4 cups water
Preparation:
    Sauté the meat with the garlic, cilantro, salt and allspices for about 5 min, add the pea keep sautéing them for another 5 min, add the tomato paste, tomato sauce and water. Bring to boil, cover and let it simmer for 25 min to 30 min. serves with rice on the side. Thank you and please enjoy.

 Stuffed grape leave with oil (ورق عنب بالزيت) is very healthy side dish; we serve this meal in our mizza. Have fun cooking this dish 
   Ingredients: serves 4-5
·       Grape leaf
·       1 cup rice
·       2 bushes of parsley (finely chopped)
·       4 tomatoes (finely chopped)
·       1 cup Green onion(finely chopped)
·        ¼ cup Pomegranate molasses
·       4 tbsp. canola oil
·       Salt, allspices
·       5 lemon juice
·       2 potatoes
·       2 carrots
Preparation:
   Chop all vegetables (take your time chopping all vegetables because it has to be very fine), after done chopping add to the veggies pomegranate molasses, rice, canola oil, salt and allspice and then mix well. Start with stuffing the leaves with the vegetables (make sure you roll them tight) when all done stack them on top of each other in a deep pot. First on the bottom of the pot arrange a few slices of the potatoes (to keep the food from sticking) add some potatoes and carrots between the each layers (as photo above). Add water, little bit salt and allspice to the pot, place a plate on top of the leaves (it keeps them from falling apart) as photo above. Cook them for about 25 min on medium heat. After that add cup ½ water with the lemon juice, leave them cooking for another 20 min on low heat. (When the rice and the leaves are soft that means it’s done). Thank you and please enjoy.

Stuffed cabbage (ملفوف محشي) is a very traditional dish in my country of Lebanon. It takes little time to prepare but it worth all the work.
  Ingredients: serve 3-4
·       1 whole cabbage
·       ½ pound ground beef
·       1 ½ cup rice
·       ¼ cup Canola oil
·       1 head garlic
·       Dried mint
·       4- tomatoes
·       4- lemon juice
·       ¼ cup pomegranate molasses
·       2 tbsp. tomato past
·       1- can tomato sauce
·        Salt, allspice 
·       4 cups water
Preparation:
First boil the cabbage (until the cabbage is easy to take apart). For the stuffing, mix the meat with rice, canola oil, pomegranate molasses, salt, allspice. Start with stuffing the cabbage; stake them in the pot on top of each other really tight. In the blender, blend the tomato with the tomato sauce, tomato paste, and water. Pure the sauce on top of the stuffed cabbage. Put a plat on top of the cabbage (that will keep them from falling apart). Cook them medium heat for about 30 min. Now mix the lemon juice with garlic and dried mint and then add them to the pot, let it cook for about 20 min. thank you and please enjoy

Kabsa (كبسة بالدجاج), this dish is originally a gulf meal but our country has change it to a Lebanese version. So easy so good. I hope u like
   Ingredients: servers 5-6
·       Whole chicken
·       4- cups rice (golden rice brand name)
·       4- tomatoes (finely chopped)
·       1- green pepper (finely chopped)
·       4- carrot (finely chopped)
·       1- big onion (finely chopped)
·       4- cloves garlic
·       Salt, allspice, kabsa spice( you can find the kabsa spice at Arabic stores)   
·        3 ½  cup Water
·       ¼ cup of canola oil
Preparation:
 Start with boiling the chicken in seasoned water, in the meantime start chopping the vegetables and sautéing them with canola oil in a deep pot on a   medium heat until the veggies is softened. Then add salt, allspice, kabsa spice and mix them good. Rinse the rice add them to the pot stir them and add the water, bring to boil and cover it. Let it simmer in a low heat for about 15-20 min. Serves with the chicken on top of the rice. Thank you and please enjoy

Pasta is a very popular itlain dish, but i made this with my Lebanese touch. ingredients:serves 2-3 1/2 pound ground beef 1_onion(chopped) 2_ cloves garlic 1 cup pasta sauce chunky marinara salt, allspice 3_ cups pasta 2_cups water peraparetion: Sautte' meat with onion, garlic, salt and allspice. Boil the pasta in salted water. Put the sauce and the water with sautted meat In a deep pot, put on the heat and boil for 15 min. Rinse the pasta and add it to the sauce keep it on heat for another 15 min. Top it with basel and parmesan cheese. thank you and please enjoy

Stuffed zucchini and grape leaves with meat (مع ورق عنب كوسه محشي) this meal takes time to cook but trust me you will be happy eating it after all the effort you put in to this dish.
    Ingredients for zucchini and grape leaves:  
·       10 –zucchini  
·       ½ pound ground beef
·       2- cup rice
·       ¼ cup canola oil
·       Allspice, salt
·       Grape leaves
For the sauce
·       2-tbsp Tomato paste, one can tomato sauce
·       1- can stewed tomato
·        3- tbsp Dried mint
·       4- lemon juice
·        4- tomato
·       Head of garlic
·       3 cups water
·       Salt, allspice
Preparation: serves 4-5
 First take out the inside of the zucchini. Start with preparing the stuffing, mix the meat with the rice, canola oil, salt and allspice. Stuff the zucchini with the meat. Rinse the grape leaves and then stuff them (as photo above) tie the stuffed leaves (as photo above, make sure you tie them good, tying is only done if you are not making a lot of grape leaves otherwise you can just stack them on top of each other tight in the pot). Now you start with the sauce, in the blender blend the tomato with tomato sauce, tomato paste, salt, allspice, can of stewed tomato and 3 cups of water. Put them in a deep pot and put the pot on the heat bring to boil after it boils for 15 min add the stuffed zucchini and grape leaves, cover and let it simmer for 40 min and then add the minced garlic, dried mint and lemon juice. After adding them, keep it on the stove cooking for 20 more min. When the rice is cooked that means the zucchini and grape leaves are done. Please enjoy.

Rice with chicken (رز بالدجاج) is a popular dish in the country of LEBANON. It is mostly served when company visits. I wish you like
    Ingredients: serves 4-5
·       2 cups rice, I use (golden rice brand name)
·       ½ pound ground beef
·       Chicken I used chicken breast and legs (your chose)
·        1 ½  cup of water
·       Chicken broth
·       Salt, allspice
·       ¼ cup Canola oil
  Preparation:
     Go ahead and boil the chicken with seasoned water (I add to the water two bay leave one onion allspice one cinnamon stick). Saute’ the meat in a deep pot with canola oil, salt and allspice. Rinse the rice and add them to the pot and then add water and chicken broth (I add the broth from the chicken that I boiled, as photo above), bring to boil cover it and simmer on low heat for about 15-20 min. Serve with salad or fatosh. Thank you and please enjoy

Fatteh(فته لحمه) is a Lebanese breakfast dish, manly served at breakfast but sometimes when made with meat it is  served at lunch. We will be learning how to make it with meat today. I hope u like.
    Ingredients: serves 3-4
·        1 ½ pound beef meat(chunks with bone)
·        2-cups yogurt
·        1-cup water
·        1 can chickpea
·        2-cloves garlic
·        2-pita bread roasted
·        Lemon juice
·        Salt
Preparation:
Boil the meat in seasoned water (as photo above) until it cooks (when the meat is tender and falls off the bone that means it’s done), while the meat is cooking preparer the yogurt. Whisk the yogurt with water and then add salt and minced garlic. Roast the bread, crack them on the serving bowl. Take the meat off the bone put them in a separate bowl, add the chickpeas and a little bit of the meat broth and lemon juice, mix them good and put them on top of the roasted bread last but not least, add the yogurt on top. If u like u can roast some pine nuts and put it on top of your dish. Thank u and please enjoy
