A tasty Caesar salad with chicken meatballs that has the classic tastes of Caesar dressing, Parmesan cheese, crispy Romaine lettuce, and tasty chicken meatballs. Great for making ahead of time meals and enjoying every day!
Ingredients: 1 lb ground chicken. 1/4 cup breadcrumbs. 1/4 cup grated Parmesan cheese. 1/4 cup chopped fresh parsley. 1/4 cup chopped red onion. 1 egg. Salt and pepper to taste. 1 bag Romaine lettuce. 1/2 cup Caesar salad dressing. 1/4 cup grated Parmesan cheese for salad. Croutons optional.
Instructions: In a mixing bowl, combine ground chicken, breadcrumbs, 1/4 cup Parmesan cheese, chopped parsley, chopped red onion, and egg. Season the mixture with salt and pepper to taste. Mix until well combined. Form the mixture into small meatballs, about 1-2 inches in diameter. Heat a skillet over medium-high heat and cook the chicken meatballs until they are cooked through and browned on all sides, about 10-12 minutes. Make sure they are no longer pink in the center. While the meatballs are cooking, wash and chop the Romaine lettuce. Place it in a large salad bowl. Once the meatballs are cooked, remove them from the skillet and let them cool slightly. In the same skillet, toast croutons if desired. Top the Romaine lettuce with the cooked chicken meatballs, drizzle with Caesar salad dressing, and sprinkle with 1/4 cup grated Parmesan cheese. Add croutons if desired for extra crunch. Toss the salad gently to combine all the ingredients. Serve the Caesar salad with chicken meatballs immediately, and enjoy!

These chicken burgers with a Thai twist are very tasty. Ginger, garlic, soy sauce, and fish sauce are used to season the ground chicken. This gives it a deliciously savory and slightly sweet taste. With a mix of cool lettuce and cucumber on top and spicy Sriracha mayo all over them, these burgers are a great mix of Thai and American tastes.
Ingredients: 1 lb ground chicken. 1/4 cup breadcrumbs. 1/4 cup chopped fresh cilantro. 2 cloves garlic, minced. 1 tablespoon ginger, grated. 2 tablespoons soy sauce. 1 tablespoon fish sauce. 1 tablespoon brown sugar. 1 teaspoon lime zest. 1/2 teaspoon red pepper flakes. 4 hamburger buns. Lettuce leaves. Sliced cucumber. Sriracha Mayo 1/2 cup mayonnaise mixed with 2 tablespoons Sriracha sauce.
Instructions: In a mixing bowl, combine ground chicken, breadcrumbs, cilantro, minced garlic, grated ginger, soy sauce, fish sauce, brown sugar, lime zest, and red pepper flakes. Mix well and form the mixture into 4 burger patties. Preheat your grill or a skillet over medium-high heat. Grill or cook the patties for about 5-6 minutes per side or until they are cooked through and have a nice char. While the burgers are cooking, toast the hamburger buns on the grill until they are lightly browned. Spread a generous amount of Sriracha Mayo on the bottom half of each toasted bun. Place a lettuce leaf on the mayo-covered bun, followed by the cooked chicken patty. Top the chicken patty with sliced cucumber and the top half of the bun. Serve your Thai Chicken Burgers with Sriracha Mayo immediately and enjoy!
