Dulce's Piña Colada (Virgin)

Difficulty: Easy
Notes:
The pineapple juice can be replaced with a fresh pineapple. One pound of pineapple should yield about 11 oz or just under a cup and a half.
For a healthier recipe, you can use fat free evaporated milk as well as reduced fat coconut cream.
Make sure ingredients are COLD in order to avoid curdling of milk.
Ingredients:
1 12 oz can of evaporated milk
1 12 to 15 oz can of coconut cream
36 to 42 oz of pineapple juice (to taste)
8 to 12 oz of ice
Total servings:
About 8 standard cups.
Preparation instructions & time: 1 hour
Place all ingredients in refrigerator for about 45 minutes.
Blender:
Peel and cut pineapple into chunks, and place it with just enough water in a blender. Blend until smooth. Run pineapple juice through strainer, once or twice, until most fibers are extracted. Discard fibers and place in refrigerator for about 45 minutes.
Juicer:
Peel and cut pineapple into chunks and use juicer. Discard fibers.
Cook time: 10 minutes
Ready in: 1 hr 10 mins
Directions:
1. Once all ingredients are cold, place half of the evaporated milk, coconut cream, pineapple juice, and 1/4 of ice in blender. Make sure all the coconut cream chunks have disappeared.
2. Add ice to taste. If you prefer dense drinks, you may want to add less ice.
Optional:
If you prefer lighter drinks, you may want to add water bit by bit until it reaches the right consistency.
