This Gluten-Free Greek Chickpea Salad is a refreshing and flavorful dish perfect for a light lunch or side dish. Packed with protein-rich chickpeas, crisp cucumbers, juicy tomatoes, and tangy olives, it's tossed in a simple Mediterranean-inspired dressing for a burst of fresh flavors. Feel free to customize with additional veggies or herbs according to your preference.
Ingredients: 2 cans 15 oz chickpeas, drained and rinsed. 1 large cucumber, diced. 1 cup cherry tomatoes, halved. 1/2 red onion, thinly sliced. 1/4 cup Kalamata olives, sliced. 1/4 cup fresh parsley, chopped. 1/4 cup extra virgin olive oil. 2 tablespoons red wine vinegar. 1 teaspoon dried oregano. Salt and pepper to taste. 4 oz feta cheese, crumbled optional.
Instructions: Put chickpeas, cucumber, cherry tomatoes, red onion, olives, and parsley in a large bowl. Mix olive oil, red wine vinegar, dried oregano, salt, and pepper in a small bowl with a whisk. Add the dressing to the salad and mix it all together. If you want, you can top it with crumbled feta cheese before serving.
