Spaghetti vongole ❤️ One of the best dishes I had in a week in Naples. Definitely will be going back.

Let’s talk about exes who hurt us but they don’t let you properly get over them because they keep texting you and constantly remind you of the pain. This is very hard and painful. How can I be over someone who I loved so much and got cheated on but keeps telling me how much he feels like a fool for letting me go? aka sweet talking and b*s*ing me. I know it’s stupid I know I should have blocked the guy already but I can’t. I just can’t let him go. I can’t let what I felt with him go.

Here is the Florentine steak also known as Bistecca Fiorentina. This dinner was the last one from my 7 day holiday in Florence last month. It has to be the best steak I have ever had in my life. Thick, juicy, tender, properly cooked, salty and full of flavour. Words cannot express what I felt with each bite. It was pure food porn. Do not go to Florence if you don't eat steak. You'd be missing out big time.

Spaghetti with sundried tomatoes, Maltese sausage and basil topped with olive oil. This is a very popular summer pasta and our sausage makes a unique taste you won't taste in any other country. Typical Mediterranean summer food ❤️

Spaghetti Pistachio pesto with guanciale and Grana shavings on top. Perfection on a plate. Exploding flavours. I felt like I am having a dinner in Lombardia.

My mornings are brightened by my favourite coffee ritual; moka coffee. My percolated coffee gives me hope for the day, because let’s be honest, the best coffees are made from percolators, the Italian way.
As I fill the chamber with mounted coffee ground, I smile thinking of how many people are doing this at the same time in front of windowsills and balconies around Italy. I carefully put the top of my percolator on and close it tight and put it on my gas cooker, just like old times.
I await for the gurgling sounds in my aluminium pot and take a peek inside the lid to check if the coffee is nearly ready. The aroma is... simply perfect. I pour the coffee in my favourite cup and sweeten it just a little bit...
After waiting for the coffee not to be scalding hot, I take my first sip, close my eyes and take a deep breath. I’m now in a rural wooden house watching the sunrise from a valley in Trentino. Life surges into me as I take sip after sip. When I finish my cup the spell is broken but I smile to myself and get ready to face the day.

When I'm home alone on a night duty day and lunch time nears, I stare at the kitchen window thinking what today's pasta will be...
I open the cupboards and see what's available. Generally I always have five pasta types to choose from; spaghetti, penne, tagliatelle, farfalle, garganelli, fusilli, capellini, linguine...
Then I see what sort of sauce I'm in the mood for and start gathering my ingredients. When I've prepared everything I heat up the water and drizzle some oil in a pan... Now is where the excitement kicks in, when my mouth already starts watering.
As the pasta is ready and the sauce is simmering I prepare the table for one and stare at the windowsill hearing the birds chirping. The smell of the sauce cooking takes my mind to another place... Italy. I'm in a garden under a lemon tree with a plate of pasta infront of me... Under the bluest of skies and and grounds of green, a sip of wine and a lovely breeze.
This is what pasta does to me. These are some thoughts I had today while cooking a simple bacon mushroom pasta dish.

PS I don't excel in food photography. It's all about simplicity and thoughts. Also, my portions are big.
