The explanation I saw was that these no-notes posts had no more origin so they defaulted the date and notes to 0. (Computers count time by "numbers of seconds passed since Epoch date" - that's 31 dec 1969/1 jan 1970 depending on your side of the globe)
Now, I do not claim to know how Tumblr works, but I can make educated guesses (as someone who's trying to finish a bachelor degree in computer science) so take this as a general explanation:
To have posts in the site means they're stored in a database, hopefully in several different tables for different attributes. (A table that references reblogs, a table with the actual post contents, a table that links the post to the original poster, etc.).
In good database practice, we don't allow users to delete entries on any given table, we just let them set stuff to on/off (a good rule of thumb for computing is to never allow users to do anything. They love fucking shit up). So if you, original poster, delete your own post, it still exists, only now it's "off" so you can't access it.
(There are, or should be, periodic database cleanups, but to quote my most beloved book, that's another story that should be left to another time)
Importantly, on Tumblr if a post is deleted by op, it can still be interacted with by anyone who reblogged it before deletion! That means reblogs aren't tied to the post creation or the post content.
Now, given the wackiness of no-notes posts, I assume what happens is that something like a post attributes entry was wiped from the equivalent table. Those seem to be things like notes, original poster and date or creation. That's why the actual contents are still there, and why we can still reblog and append new stuff to it.
In summary, the database is unable to update the actual post attributes because they don't exist anymore. As for why we can "give the post a note" even though it doesn't really count, I'm sure it has something to do with the user session.
Basically, the site/app refreshes the numbers from the database each time it asks for new posts (in my case, once per page, because I have endless scrolling off). When you give a note to something, it updates your screen and sends a message to the database saying "one more like/reblog to this posts please". That's why when two blogs you follow have the same post close together, you can like one and your like won't show up on the other (and you can "like it again", even)
It's the smart way to do it because it saves on network resources. There's no need to be endlessly refreshing the posts on the dashboard (that'd multiply the strain on the server for no real gain, in fact it'd make the site a slog and be a worse user experience overall).
Anyway, hope this made sense and isn't too technical.

How did you reblog something without giving it a note!? What is your amount of knowledge in Tumblr witchcraft? What is your level? What did Tumblr look like in 1969?
I think I saw an explanation for how those posts works but I forgorrr something about tumblr bugging out and picking the earliest date they have or something I think. For the no notes part idk

Notes on a non-human character from the dream I had the day before yesterday🕊‎
In the dream, this boy was being called an angel.
He looks like an angel (a supernatural being), but if you look closely, each part of his body is extremely bird-like.
His intelligence is about the same as a crow’s. He’s treated like an animal. His body resembles a human’s too closely, so they’ve put clothes on him—just in case.
I guess I’m thinking about the same kind of beings whether I’m asleep or awake.

I don't know exactly how to articulate this but... if you repeatedly show historical fiction women rejecting traditionally female skills/duties and doing swords instead, because swords is obviously the Most Important Thing, you are kind of implying that all the work that has been traditionally done by female hands for millennia was useless all along and not, you know, keeping civilization going. Because it's usually rejected not as a personal preference but as This Is The Important Stuff (male work) and That is The Dumb Useless Stuff (women's work) and that kind of bothers me. The message was supposed to be Vital But Underpaid and Underappreciated, not women's work is insignificant so let's all go do swords.
