ما عاشق لذت بردن از شیرینی و بستنی با زعفران ایرانی در مراسم عروسی و موارد خاصی هستیم، اما آیا می دانستید که زعفران یک گیاه است که می تواند اثرات فوق العاده ای بر سلامت و سلامتی ما داشته باشد!
یک واقعیت بسیار جالب در مورد زعفران (کاشمریا، کومکوما) این است که حدود 150 هزار گل برای تولید یک کیلو زعفران خشک شده استفاده می شود و این باعث می شود که آن بیشترین میزان ادو��ه جات در جهان باشد. در حالی که زعفران بخش مهمی از غذاها در هند، اسپانیا و ایتالیا است، در هند، اسپانیا، یونان و بخش های خاورمیانه واقع شده است.
زعفران یا کزر غنی از پتاسیم، منیزیم، روی و سلنیوم است و فراوان است با آنتی اکسیدان هایی که رادیکال های آزاد را تخریب می کنند. ما زعفران را به عنوان بخشی از رژیم غذایی و ظرافتهایمان دوست داریم، اما بسیاری از اینها می دانند که خواص فستیوال طلای زعفران فوق العاده ای دارند. مکانیسم اساسی زعفران بر بدن ما تأثیرات آرامش بخش و آرام بخش داشته است. و این به نوبه خود باعث افزایش میل جنسی می شود.
زعفران داراي خواص ضدافسردگی خوبی برای مردان و زنان است و همچنین با اضطراب، بی خوابی، PMS و مقاومت به انسولین کمک می کند. برخی از آنتی اکسیدان ها شامل کروکین، کروکتین و سافرانال می باشند. در حالی که این افزایش میل و تحریک جنسی است، جریان خون به اندام های جنسی افزایش می یابد.

همچنین زعفران اغلب با فرهنگ عامه هم ارتباط دارد. رومی ها برای پوشاندن زعفران بر روی تختخواب های تازه کار استفاده می کردند.
اما استفاده از زعفران بسیار فراتر از فولکلور گسترش می یابد و ادویه عالی راه درمان اختلالات جنسی و افزایش باروری است. برای مردان، این روش عالی برای بروز مسائل مانند انزال زودرس است. و برای زنان، استفاده از زعفران به طور موثر به عنوان یک راه حل برای کمردرد قاعدگی و سندرم پیش از قاعدگی موثر است. و این حتی یک ابزار برای درمان بیماری های پیچیده سلامت جنسی است.

Bring the water to the boil. Add saffron and cardamom (only previously crushed seeds). Simmer for 8 minutes.Turn off the heat; add the tea and leave to stand for 5 minutes. Strain and serve.

60 ml oil (or melted butter) 60 ml rosewater /
cinnamon powder /
30 g slivered almonds /
chopped pistachios
Preparation: Place rice in a pan with 2 liters of water and bring to the boil. Stir occasionally. After approximately 20-25 minutes, add the sugar and continue stirring constantly, until the mixture thickens slightly. After another 20-25 minutes, dissolve the saffron in hot water and add to the pan. Pour the oil (or melted butter) into the pan, followed by the rose water. At this point, the Shole Zard is almost ready. Now add the almonds. Pour the contents of the pan into a bowl and set aside to cool. Use cinnamon, pistachios and almonds to decorate the dish.

Chocolate chips, cinnamon candy, coconut, walnuts (or any other kind of nuts), are also great options.
Now to "build" your new layer cake, all you need to do is, layer the ingredients into a clear glass bowl. The presentation is so beautiful because you can see all the colors & ingredients through the glass! You may want to choose ingredients & colors to match whatever holiday that you are preparing the cake for.
Start with the cake as the first layer – (break into pieces or cut into squares), add fruit, then some pudding, then cool whip. Cake – fruit – pudding – cool whip, etc – until the bowl is almost filled. You can then top with items like: coconut, nuts, or cherries if you wish.
If you'd like to have colored coconut, just place coconut in a ziplock bag with a few drops of food coloring, and mix until desired color is reached.
An example of a nice holiday display; a large platter with the glass bowl in the center. Add green coconut "grass" around the platter. Then, add a few nicely placed Easter eggs (candy, or the real ones =) around the green grass.

As the name implies, dehydrating, or food drying, via a food dehydrator, removes a significant amount of water from food. The water content for most fruits is very high, typically 80% to 95%. Removing the water from food, including fruits, inhibits various bacteria, yeast and molds from growing and spoiling the food and thus helps in its preservation and storage. Removing water from fruit also decrees the fruit's volume, that, once dried, the fruit's nutrient, calorie, and sugar content becomes more concentrated per serving. A half cup of dried fruit will contain more calories, nutrients, carbohydrates (primarily the fruit's natural sugar), and fiber, among other nutrients and minerals, than a half cup of fresh fruit. For example, a half cup of raw apples will contain about 2.5 grams of fiber, 65 calories and 17 grams of carbohydrates. A half cup of dried apples will contain approximately 6 grams of fiber, 180 calories and 50 grams of carbohydrates. While the dehydrating process does cause some nutrient loss, dried fruit is still an excellent source of:
* Vitamins A and various vitamin B's * Minerals including calcium, iron, magnesium, phosphorous, potassium, copper and manganese * Protein * Natural sugars * Antioxidants
Dried fruit generally does not contain vitamin D and only contains small amounts of Vitamin C. However, applying a coat of lemon, lime, pineapple or other citrus fruit juice before the fruit dehydrating process can add vitamin C to the dried fruit, help prevent food discoloration and offset flavor and nutrition loss. Before drying, simply dip the fruit in the juice. Do not soak the fruit as this will prolong the drying time required in the food dehydrator.

With the three ways of preserving traditionally being freezing, cannning and drying, the only method that keeps food in its "raw" state nutritionally speaking is the drying method. That is, if it is done properly.
Drying fruit is one of the oldest ways of preserving extra, and also very easy. If done properly, dried fruit can be preserved with little nutritional loss for many years. Most people understand that canned and frozen food only last about a year at the most, and would not even think of using 5 year old canned food, for instance.
Recently, I opened a jar of dried peaches that I had attended in September of 1999, and to the great delight of my 13 year old, who was born in 1999, we enjoyed some peaches that were harvested and dried 13 years ago.
I know, some people may think, "yuck" they must've been yucky or black, or whatever. They were not!
The advantage to drying fruit at home the natural way is that YOU control the temperature, the quality of fruit, and the use or non-use of chemicals in the process. When drying fruit at the optimum temperature range, the fruit retains its color, enzymes, taste, and overall nutrition.
Dry fruit correctly can reserve the fruit for many years, rather than the usual recommended one year. It is sort of like the grain that was found in some Egyptian tombs that still sprouts because it was preserved properly.
Now, some nutrition and taste may be lost on older fruit, but for the most part, it is intact when done correctly.
The 13 year old peaches that we opened recently were great -we loved them, and they are the same golden color they were when I first dried them.
One note about drying fruit for the long term: if you want your dried fruit to last for more than a year, dry it longer, til it is "breakable, not bendable." If you are drying fruit more for short term use, then leaving it softer is fine, and can be more enjoyable for some.
Drying fruit is easy, with the right equipment. Not all food dehydrators are made equal. We use an Excalibur dehydrator, since the fan blowing from the back does not circulate the air, which is more effective in drying fruit.
So, usually the fruit is cut into 1/4 inch pieces, and laid on the sheets to dry. Bee Beyer's book, Food Drying at Home the Natural Way, is the best book on the subject, in my opinion, and goes into detail about any variations in cutting and drying times.
I typically leave my drying fruit on the dehydrator for 3 days, at her recommended temperature of between 110-118. The low temperature preserves the color, taste, and most importantly the enzymes and nutrition.
Dry fruit is so easy, my children love to do it – "grazing" as they go, of course! 🙂

Why Nuts Are A Great Snacking Choice
If you walk through the snack food aisle of any grocery store, you will find literally hundreds of choices. Chips, candy, crackers, flavored this, spicy that, the list goes on and on.
The problem with most snack foods is they are processed foods. That means artificial ingredients have been added, like coloring or sweeteners. They might taste good, but are they a healthy choice? In most cases, the answer is no.
Nuts on the other hand are a natural product. They are a product of trees or plants, and by the time they have reached the grocery shelf, they've had little processing except roasting and salting. Yes, there are nuts that are candy coated or with flavor additives. But for the purpose of this discussion, let's consider nuts that are more or less in their natural state, plus lightly roasted and salted.
Almost all nuts are very good for your health. Three in particular stand out, and they are almonds, cashews, and Brazil nuts.
Almonds:
Almonds are about the best choice you can make. First of all, they are high in monosaturated fat (the good fat) which is important for blood circulation and heart health.
They are very rich in protein and fiber, making them an ideal snack after a workout. Further, they have high amounts of potassium, magnesium, and vitamin E, all of which are important for overall health. Vitamin E in particular is known to fight certain types of cancer.
Cashews
There is a reason why cashews are often picked first from a jar of mixed nuts. They taste great! But great taste is not all the cashew has going for it.
Did you know cashews have just about the lowest fat content of any nut? Most of the fat they do contain is monosaturated, and they are high in fiber and protein.
Interestingly, cashews are a great source of copper, an important mineral in our diets. Copper helps protect bones, blood vessels, and promotes healthy energy levels.
Brazil Nuts
Brazil nuts are the largest nut in size. They have a rich, slightly sweet flavor, similar to a macadamia nut. From a health standpoint, these nuts are high in selenium, an antioxidant that fights certain cancers, particularly prostate and breast cancer.
And in addition to protein and fiber, Brazil nuts are high in zinc and iron, both of which are important for digestion.
Summary
Just about any type of gourmet nut is a healthy snacking choice, but certain varieties own special health promoting qualities. Almonds, cashews, and Brazil nuts are all rich in various vitamins, anti-oxidants, protein, and fiber.

Iran has a rich history stretching back over 6,000 years, and many culinary delights. For all Iranian lunches and dinners, certain accompanying dishes and side plates ("mokhalafat") are considered essential. These include:
– Sabzi – A plate of fresh herbs including basil, coriander, cilantro, fenugreek, Persian watercress and tarragon.
– Naan – Persian flat bread
– Panir – A Persian variety of cheese, somewhat similar to feta.
– Khiyarshur – Persian pickles.
– Torshi – Relishes.
– Cucumbers, sliced tomatoes, onions, yogurt and lime juice.
Additionally, Persian meals are traditionally accompanied with tea ("chai") which is served with breakfast, and both before and after lunch and dinner, as well as throughout the day.
Rice is a popular dish in Iran, having been bought, it is believed, to the country in ancient times from India or perhaps Southeast Asia. There are several ways in which rice may be prepared in Persian cuisine, but despite the best-known is "Chelow" the rice is soaked and partly boiled, the water is then drained and the rice steamed, resulting in very fluffy rice with a golden crust at the bottom of the pot.
Some other well-known Iranian dishes include:
– Abgousht – Beef and vegetable stew.
– Fesenjan – A sweet and sour pomegranate-walnut stew, traditionally made with either chicken or duck.
– Shirin Polo – This is a traditional wedding dish, consisting of rice with slivered orange peels, slivered almonds and pistachio nuts.
– Chelo Kabab – The most famous Iranian dish of all. Chelo Kabab is marinated charcoal-grilled lamb served over rice.

In some ways it can be, but fresh fruit is superior overall - except when it comes to questions of convenience and accessibility, portability and storage. Here are some of the differences, and what type of fruit is best to try. Fresh fruit is arguably the most delicious food that comes straight from nature's bounty, and it needs no preparation or cooking to be enjoyed. The benefits of fresh fruit are wonderful - fruit is packed full of nutrients, vitamins, minerals, antioxidants, enzymes, and energy (typically in the form of fructose, or fruit sugar). Oddly, though, dried blueberries have more antioxidants than their fresh counterparts. Drying and freeze drying are two of the ways to preserve fresh, ripe fruit for eating long after the harvest is over. Conventional fruit drying processes almost always include additives, especially sulfur dioxide, to preserve the color and freshness of the fruit. Freeze dried fruit does not usually contain additives, as the freeze drying process actually preserves the fruit better than conventional drying does. Because fresh produce can be difficult to store effectively, and is not as practical to carry on hiking expeditions, camping trips and outdoor excursions, the frozen dried stuff is a wonderful way to get the benefits of fruit without the fuss and muss of heavy fresh fruit . Freeze dried fruits and regularly-dried fruit contain sugars in a more concentrated form than you find with fresh produce, since the water has been mostly or entirely removed from the strawberries, peaches, apples, grapes, plums, or whatever fruit is in question. So it is important to remember that about 1/4 or 1/2 a cup of dried fruit equals a cup or so of fresh fruit as far as calories are concerned. Fresh fruits and vegetables are better than dried items because they contain live enzymes and no additives and most of their vitamins and minerals are available in higher percentages. They also have lots of water, which fills you up more quickly and then helps you to not consume too many calories while enjoying your fruit. These are the ones I like to savor when I only have one or two left left. It does depend on what the variety of candies is like to start with, but generally I make sure that I always get a mixture with soft nougat in, and, as these offer my moment of bliss, I leave them until last. There is something special about nougat. I think it must be the amazing texture and feel in the mouth. As far as I'm concerned there is nothing to compete with it for that super mouth-watering effect, and the chewy feeling as you roll it around in your mouth trying to get that last ounce of flavor and smoothness that only the nougat can give . They are soft and chewy treasures that are extremely irresistible! Nougat is also perfect for adding fruits and nuts to it. This enhancements the visual appeal of the candy, and for some reason never tenders to smother the taste of what you add to it, in fact it improves it. If you can imagine the taste of nougat with bits of your favorite fruit or nut inside, such as pistachios, it does not get you dashing down to your candy store, because you've just remembered how long it's been since you last tasted some ! If you do not have a candy store near-by, why not make some at home, and maybe there will even be some left over for others in the family. Before you can start candy making you need to have certain utensils and equipment ready at hand. You need a baking pan, foil, a 4 pint saucepan, a candy thermometer, an electric mixer, a wooden spoon, knife and some clear plastic wrap. The ingredients required are as follows: 1 1/2 cups of sugar, 1 tablespoon of cornstarch, 1 cup of light corn syrup, c cup water, 2 egg whites, 1 teaspoon of vanilla extract, 1 cup of pistachio nuts, or flaked almonds, or any fruit or nut of your choice, butter and extra cornstarch.
Line the baking tray with foil, and make sure to leave about an inch of foil over the sides of the pan. Spread butter on the foam and sprinkle it lightly with the spare cornstarch.
Secure the candy thermometer to the side of the saucepan. Mix the sugar and the cornstarch together in the saucepan, then add the corn syrup and the water. Mix all the ingredients altogether.
Cook the mixture on a medium-high heat until it boils. Stir it often and make sure all of the sugar dissolves. Continue heating the mixture and keep checking the candy thermometer. When it reaches 286 degrees.F remove the mixture from the heat.
Put the egg whites into the mixing bowl, and beat / whisk them on medium speed until they form stiff peaks. Put the mixer on a medium / high speed and then pour in the hot mixture slowly, little at a time, over the egg whites. You can now add the vanilla and beat until well blended. Continue blending until the mixture becomes thick and is no longer glossy.
Finally, mix in your choice of fruit or nuts, and pour the mixture onto the baking tray. Score the nougat into rectangles while it is still warm. Once the candy has cooled and set, lift it from the tray using the sides of the foil, then cut the nougat into pieces along the score lines you made earlier. Wrap the individual nougat in plastic and they are ready to serve.
This soft nougat recipe makes it so easy to produce such delectable, scrumptious and colorful candies, that you will wonder why you had not thought of making them before. The variety of different flavored nougat you can make is huge. You could even add the favorite fruit or nut of each member of your family, and give them all a wonderful surprise. There are few foods which get the same reactions as kids eating sweets such as these, so do not delay make some today, and remember to have your camera ready to record the happy expressions on their faces!
