A vegan take on the traditional British cookie, this one is filled with sweet jam.
Ingredients: 200g plain flour. 100g vegan butter. 50g caster sugar. 1 tsp vanilla extract. 1/2 tsp baking powder. 4 tbsp raspberry or strawberry jam.
Instructions: Preheat the oven to 180C 350F and line a baking tray with parchment paper. In a bowl, mix the flour, sugar, and baking powder. Add the vegan butter and vanilla extract, then mix until it forms a dough. Roll out the dough on a floured surface to about 5mm thick. Use a round cookie cutter to cut out an even number of rounds. Use a smaller cutter to cut a hole in the center of half of the rounds. Place the rounds on the baking tray and bake for 10-12 minutes, or until golden. Allow the biscuits to cool completely. Spread jam on the whole rounds, then top with the cut-out rounds. Dust with icing sugar if desired.

Instructions: Follow the directions on the package to cook the pasta until it is al dente. Remove the water and set it aside. Warm up the olive oil in a big pan over medium-low heat. Chop up some anchovies, mince some garlic, and add some red pepper flakes. After two to three minutes, the garlic should smell good. Put olives, capers, and diced tomatoes in the pan. Add pepper and salt. Simmer for 10 to 15 minutes, stirring every now and then. Set the grill to medium-high heat while the sauce is simmering. Add a little olive oil, salt, and pepper to the cherry tomatoes that have been cut in half. As soon as the food starts to turn black, take it off the grill. Put the cooked pasta in the pan with the sauce. Add the pasta and toss it so that the sauce covers it all.
