Who takes care of Steven as a baby? Or everybody tries to do that but a little terrible at it?
After Steven was born Greg took a break from his music career so he did a lot of the care, though he was by no means doing it alone. The Crystalbacks helped out when needed, covering for Rose, whose condition was much worse when Steven was little. Sneople don't generally do much in the way of nurturing, but they are biological lifeforms so they did at least have some idea of what organic lifeforms needed, unlike gems.
The Maheswarans also did a lot. Dr Maheswaran is one of the only humans that knew about Rose and was over a lot to check on her, so she also gave a lot of advice in terms of babies health and needs. Greg doesn't really like this much at first because they promote a very structured and rigid sort of childrearing he isn't fond of, but he does come to appreciate their help and knowledge. They kind of balance each other out.
In short, Greg did most of the childcare while the Maheswarans gave advice and probably babysat sometimes and honestly while he was confined to the bunker until he was 5 or 6 (when Dr Maheswaran insisted he really should go to school) he was raised with a lot more structure and, well... actual parenting than canon Steven.

After seeing the previous asks, it got me thinking, what would happen if the Authority found out about Steven, would they take him or, considering who they are, do something worse.
Oh! I thought I'd answered this already but it's still in my inbox so I might have just typed it up and forgot to hit submit... sorry!
Anyways, the Authority would... not be happy about Steven. Obviously.
Or rather, they wouldn't be happy what he means, that the Crystalbacks have been interacting with humans, that they've revealed themselves. The Authority finding out about Steven endangers him, the Crystalbacks, and all of Beach City.
But as for Steven himself, they would probably take him away and do some genetic tests on him. A sneople/human hybrid has never happened before, they would want to know everything about him (biologically, at least. not so much about him as a person). They'd probably keep him alive for knowledge's sake, but no guarentee on how long.
Story-wise however, I do think that when Steven gets discovered/taken (and he would, eventually), that's when he would meet Sapphire and Ruby. They would be the ones to help him escape (and maybe take some others with him!)

Don’t know if someone already asked this but, and it probably sounds dumb but, why do the crystal backs have to hide Steven’s stilt eyes in the public, wait… do the crystal backs even go in public?
Not at all :) I think it's been touched on, but I don't know if I fully stated this before.
The Crystalbacks do not go out in public! Sneople are not known about by the general human population, and the remaining Crystalbacks are closely monitored to ensure they are not breaking this rule (or any others, for that matter) (They have broken this rule once, with the Maheswaran's, and have managed to keep that a secret from the Authority... so far)
Steven wears sunglasses to hide his slitted eyes from humans, but also from any surveillance that may pass by from the Authority, both of whom would ask questions. It's also just more comfortable to wear them, especially in the summer or around flashing lights.
When he's older he sometimes goes to Halloween parties without them and pretends he's wearing fun contacts. People (mostly) believe him, and it's good to have people know he supposedly owns slit-eye-contacts, in case anyone catches him without his sunglasses any other time.

What would of happened after the red eye incident, or is that a spoiler?
Nah, it's not
...
I mean, kind of, but since I haven't really been updating (and if I do it'll probably not be linear from now on) here's a general layout of events:
The Red Eyes are sent regularly to check on the surviving rebellion members in their exile/prison. When the red eye was destroyed it raised suspicion. Peridot is sent (annoyed and grumbling) to check and make sure nothing is going on.
She monitors them for a while, as they try to hide Steven, before she runs into him. At first she is determined to report him but, after getting trapped inside by the rain (which she could go out in but heavily dislikes) and interacting with Steven some more she decides that she should really "gather more data before reporting anything" and maybe they don't need to find out right away.
So Peridot starts checking on them regularly instead of the automated Red eye, and eventually gets less grumbly about it.
Other characters show up, but I hadn't actually worked out their appearances in the timeline yet. Details as currently set are:
I know that Lapis was part of an underwater research facility that got abandoned and forgotten about sometime during the rebellion, and she just kinda stayed out there, feeling both abandoned by the authority and afraid of the battles.
Jasper was part of Rose's team before the rebellion and still holds some loyalty to her, but believes she is dead and currently works for the Authority as their best soldier.
Sapphire was an esteemed scientist and Ruby, one of her guards. When Ruby accidentally got some of her DNA in a cloning experiment it created an entirely new type of snerson. They loved their new creation and, knowing the Authority would kill her, took Garnet to the rebels hoping they would protect her. They rebellion tried more of this experimental cloning with Sapphire's (secret) help. The Authority never knew Ruby or Sapphire were working with the rebellion so when it was defeated they kept their positions, though unlike Jasper they always have an eye out for hints of a new rebellion and continue their secret projects.

How dose Sneeple fusion work? Since they're not light based like gems are?
In short: it doesn’t
You’re absolutely right, Sneople are biological lifeforms, not light-based, so they can’t fuse. The way I’ve decided to get around this, since obviously there are a lot of fusions and a lot of love for them, is that fusions are their own seperate characters. Completely separate.
Sneople primarily create more sneople through cloning, so fusions are going to be non-natural types of sneople, artificially created by combining different types of sneople’s DNA

Correct me if I’m wrong but, I think you said in this au, character are younger. So, how old is Steven?
Steven is currently 9!

how are sneople born/made?
Sneople can naturally reproduce through a form of Parthenogenesis, though in more recent decades they primarily repopulate through cloning!

There is a kind of snake (i forgot the name) whose scales can 'trap light' making it harder for them to be seen. Is there a type of sneople that can do something like that?
That sounds really cool! Does anyone know what it’s called? I tried to google around but I couldn’t find it...
Yeah, some sneople could do something like that! I think different types would have a variety of camouflage abilities. The one I can think of off the top of my head is maybe Moonstone?

Okay! Fusions are back on as characters!
They won’t actually be fusions, because sneople still can’t fuse, but I’ve got an idea to incorporate them, so they will exist!

How does lapis fly?
That...
is a good question.
Technically the same way she does in the show? She makes wings out of water. I have some pseudoscience canon explanation where she like, uses electricity to shape the water? Like when you put your finger near a faucet and the water moves closer to it cuz of static electricity or something? Like an advanced form of that which only works because this is fiction. But, uh, yeah, It’s kinda handwaved on exactly how, like the show.
In this AU though, Lapis actually swims far more than she flies!
