Edamame Veggie Burger These Japanese style burgers are the perfect meat alternative. Ingredients 45g millet 120ml cold water 2.25 tsp salt, plus more if required 1 medium carrot 1 large red radish 2 tbsp fresh ginger, peeled and finely chopped 1/2 clove garlic, finely chopped 2 tbsp freshly squeezed lime juice 2 tbsp mirin 1/8 tsp Asian chili paste, such as Sri Racha sauce 450g frozen blanched, peeled edamame (soybeans), thawed 105g panko (Japanese-style) breadcrumbs 2 large egg whites, beaten Vegetable oil, for brushing For the garnish Naan bread Alfalfa sprouts Pickled ginger Wasabi Method 1) Heat the millet in a small dry saucepan, with a tight-fitting lid, over a medium-high heat and cook, shaking occasionally, until the millet begins to "pop". Continue toasting the millet, for about 2 minutes, until the popping subsides and until it smells like freshly popped popcorn. Set aside to cool slightly. 2) Add the water and 0.25 tsp of the salt to the saucepan and bring to a boil over a high heat. Wrap the pan lid tightly with a small tea towel and cover the saucepan. (Make sure the towel's edges are folded up well away from the heat.) Lower the heat to low and simmer covered, for 20 minutes. Remove from the heat (don't uncover) and set aside for 10 minutes. Fluff the millet with a fork and transfer to a large bowl. 3) Grate the carrot and radish into the bowl of millet. Add the ginger, garlic, lime juice, mirin and chilli paste and stir to combine. 4) Meanwhile, bring a medium pan of water to a boil and salt it generously. Add the edamame, cover, return to the boil and cook for about 5 minutes, until soft. Drain and immediately add to the bowl of millet mixture. Stir to combine and set aside to cool. 5) When cool, season the edamame mixture with the remaining 2 tsp salt. Transfer to a food processor and puree into a paste. Return the edamame to the bowl and stir in the panko and egg whites until incorporated. 6) Using your hands, form the edamame mixture into 8 patties about 7–8 cm in diameter. Place on a greaseproof paper-lined baking sheet and refrigerate until set. 7) Place a rack about 10cm from the grill element and preheat. Grilled Portobello Burger with Onion Jam Substitute beef burgers for portobello mushrooms for a healthy, veggie option. Ingredients For the horseradish cream 160g low-fat plain yoghurt 3 tbsp prepared horseradish For the onion jam 2 tbsp extra-virgin olive oil 3 medium-large red onions, thinly sliced (about 900g) 1 sprig fresh thyme Salt and freshly ground black pepper 240ml red wine 80g honey 60ml red wine vinegar For the portobello burgers 2 tbsp extra-virgin olive oil 1 garlic clove, crushed 2 tbsp balsamic vinegar 1 sprig fresh thyme 4 large portobello mushrooms, (about 450g) stemmed Salt and pepper Lettuce leaves 4 brown baps, or brown English muffins, split and toasted Method For the horseradish cream: Put the yoghurt in a kitchen towel-lined strainer set over a bowl, set aside to drain and thicken, about 60 minutes. Discard the watery liquid. Whisk the horseradish into the thickened yoghurt. For the onion jam: Heat two tablespoons of the olive oil in a medium frying pan, over medium heat. Add the onions, thyme sprig and season with salt and pepper, to taste. Cook, covered, until the onions have wilted, about 10 to 15 minutes (give them a stir every now and then with a wooden spoon to prevent them from sticking). Add the red wine, and simmer over high heat until most of the wine is absorbed into the onions. Add the honey and red wine vinegar and simmer gently until the onions are jam-like, about 15 minutes. For the portobello burgers: Preheat a griddle pan over a medium-high heat. Whisk the oil, garlic and balsamic vinegar in a bowl. Strip and add the leaves from the sprig of thyme. Coat the mushroom caps all over with the flavoured olive oil. Griddle the mushrooms, turning as needed, until tender but not mushy, about 3 to 4 minutes per side. Season with salt and pepper. Sandwich the mushrooms between the baps, top with some of the onion jam, some lettuce, and a dollop of the horseradish cream. Sweet potato pie A Southern American classic and a must-have on any dinner party table. Ingredients 3 medium sweet potatoes (about 675g) 30g unsalted butter 2 large eggs 0.5 tsp fine salt 250ml double cream 65ml golden syrup 1 tbsp pure vanilla extract 85g light brown sugar 0.5 tsp finely grated orange zest 0.5 tsp ground cinnamon 0.25 tsp freshly grated nutmeg 0.25 tsp ground ginger Pinch ground cloves For the pastry case 175g plain flour 2 tbsp sugar 0.5 tsp fine salt 65g non-hydrogenated vegetable fat 110g cold unsalted butter, diced 1 large egg yolk 1 tbsp cider or white wine vinegar For the topping 125ml double cream 1 tbsp whisky, rye or bourbon Candied pecans, homemade or store bought, recipe follows For the candied pecans 1 large egg white 3 tbsp sugar 0.5 tsp ground cinnamon 100g pecan pieces Method For the filling: 1) Preheat the oven to 220C/Gas 7. Put the sweet potatoes on a small roasting pan and bake until easily pierced with a fork, about 40 minutes. Peel the cooked sweet potatoes and mash lightly with a fork; you should have about 450ml puree. 2) Mix the sweet potatoes and butter in the food processor until smooth. Add the remaining ingredients and pulse to combine. Set aside. For the pastry case: 1) Pulse the flour, sugar and salt in a food processor with the metal blade until combined. Add the fat and pulse about 10 times. Add the butter and continue to pulse until it resembles cornmeal mixed with bean-size bits of butter. 2) Beat the egg yolk and vinegar together, add to the processor and pulse 3 to 4 times, but don't let the dough form a ball in the machine. Remove the blade, and gather the dough together by hand. If dough does not come together, sprinkle up to 1 tbsp of ice cold water over it and bring together. 3) Wrap the dough in cling film and shape into disk. Refrigerate at least 1 hour or up to 2 days. 4) Lightly dust the counter with flour. Roll the dough into a 30cm circle and transfer to a prepared pie tin. Trim the dough so that the edges hang about 1cm over the tin; fold the edges under and flute as desired. 5) Pierce the crust all over with a fork, and refrigerate for at least 20 minutes or up to a day.
