After what seemed like ages, I was finally able to bake some Lemon Bars for the family. During the weekend, I scoured the net for reliable Lemon Bar recipes and decided to try this recipe
LEMON BARS
Preparation Time: 10 minutes
Baking Time: 40 minutes + cooling
Servings: 48
Ingredients: Crust
3/4 cup butter, softened
2/3 cup confectioners' sugar
1 1/2 cups all-purpose flour
Filling
3 eggs, lightly beaten
1 1/2 cups refined sugar
1/4 cup lemon juice
3 tablespoons all-purpose flour
confectioners' sugar for dusting
Procedure:
Pre-heat oven to 350degF. In a large bowl, beat butter and confectioners' sugar until blended. Gradually beat in 1 1/2 cups all-purpose flour. Press onto bottom of a greased 13x9 in. baking pan. Bake 18-20 minutes until golden brown.
In a small bowl, whisk eggs, sugar, lemon juice and flour until frothy; pour over hot crust.
Bake 20-25 minutes longer or until topping is set and lightly browned.
Cool completely on a wire rack. Dust with confectioners' sugar. Cut into bars. Refrigerate.
Personal Notes:
I used a 10x10 inch baking pan lined with baking paper instead of a greased 13x9 inch baking pan. (Servings: 36)
Definitely easy to make. My family loved it!!!
