Delicious, bubbling, ooey, gooey, caramelized sugar syrup is the basis of much of what we do; it produces wonderful aromas and is an intoxicating sight to see! Did you know that the browning of sugar is caused by the breakdown of its carbohydrates in a process known as the Maillard Reaction? Its the same process thats responsible for breaking down carbohydrates and proteins in meats, which is why you get that delectable 'brown crust' on a perfectly grilled or roasted piece of meat!
