✿ 红油抄手 | Sichuan Spicy Wonton In Chili Oil ・紅油抄手(ホンヨウチャオショウ)。四川と重慶の名物料理です。紅油(ホンヨウ)がラー油で、抄手(チャオショウ)が四川の方言でワンタンです。ラー油がたくさん入っている四川風の料理なので、ピリリと辛いのが特徴です。抄手はワンタンと似ていますが、ワンタンよりも皮が薄くて少し小さいです。 ・四川ではラー油や花椒の利いた紅油スープ、鶏ガラスープもしくは清湯(醤油)スープと共に食べる事が多い。餃子より柔らかく、ぷるぷるした皮とふわっとした餡を楽しめます。
