What is Chicken Biryani?
The word "biryani" is derived from the Persian word "birian," which means "fried before to cooking." The Muslims of the Indian subcontinent are the originators of this South Asian mixed rice dish. It's part of India's famed Mughlai cuisine, which evolved from the 15th century until the mid-nineteenth century during the rule of the Mughal empire. The Mughals elevated cookery to an art form, bringing to India such dishes as biryani, pilaf, and kebabs
WHY DO I LOVE IT SO MUCH?
Essentially, it’s your favorite chicken curry (or vegetable or other protein of choice) buried under a mound of delicately, the heady aromas, the vibrant colors, the spiced fluffy rice, and those addictive curry flavors, all made in one pot. The rice is steamed over a low heat so it absorbs the flavors of the curry bubbling away underneath.
So in a nutshell, it’s every curry-loving-carb monsters’ dream come true. It’s got my name written all over it!

PREPARATION FOR CHICKEN BIRYANI
1. This recipe needs half kg chicken (1.1lbs.). Make few slits on all the chicken pieces and add to a large bowl. Then add
3 tablespoons plain yogurt (Indian curd)
1 1/4 tablespoons ginger garlic paste
1/2 to 1 tablespoon garam masala (or biryani masala)
1/2 teaspoon salt
1/2 to 1 teaspoon red chili powder (reduce for kids)
1/4 teaspoon ground turmeric
1 tablespoon lemon juice (optional)

2. Mix everything well and marinate the chicken. Cover and set this aside for 1 hour. You can also rest it overnight in the fridge.

3. Meanwhile add 2 cups basmati rice to a large pot and rinse it at least thrice. Drain and soak in fresh water for 30 mins. Drain to a colander after 30 mins. Optional - soak a pinch of saffron strands in 2 tablespoons hot milk

COOKING CHICKEN
4. Heat ghee or oil in a heavy bottom pot or pressure cooker. Make sure you use a large one for this. Using whole spices is optional but recommended. Use whatever you have. I use
1 bay leaf
4 green cardamoms
6 cloves
1-inch cinnamon piece
1-star anise
3/4 teaspoon shahi jeera (caraway seeds)
1 strand mace
5.add thinly sliced onions. On medium heat, fry them stirring often until uniformly light brown.
6.This is the correct color of the onions. Do not burn them as they leave a bitter taste.

7. Add marinated chicken and sauté until it becomes pale for 5 minutes.

8. Lower the flame completely . cover and cook until the chicken is soft , tender and completely cooked

9. Check if the chicken is cooked by pricking with fork or knife. It has to be just cooked and not overdone. Evaporate any excess moisture left in the pot by cooking further without the lid.
10. Taste test and add more salt if needed .
1/4 cup pain yogurt
1 teaspoon garam masala
1/4 to 1/2 teaspoon red chili powder
1 slit green chili pepper
2 tablespoons chopped mint leaves (pudina)

HOW TO MAKE CHICKEN BIRYANI
11. Mix everything well . spread it evenly in a single layer
12. Layer drained rice all over the chicken. To a separate bowl, pour 3 cups water and add 1/4 to 1/2 teaspoon salt . if cooking in a spot, start with 3 cups water at this stage.
Stir and taste the water. It must be slightly salty. Pour 2 cups of this across the sides of the cooker or pot . Pour rest of the water over the rice gently
13. Level the rice gently on top. Add 2 tablespoons more mint leaves . Do not mix up everything , the taste of the biryani cooked in the shown method is good. Optionally you can sprinkle 2 tablespoons fried onions and saffron soaked milk.

14. Finally cover the pot or cooker. If cooking in a pot, cook on medium heat until the rice is done completely if the rice is undercooked pour 1/4 to 1/2 cup boiling water at this stage. How much to add depends on the quality of basmati rice. Cook covered until the biryani rice is perfectly done, grainy, and fully cooked. Rest it covered for 15 mins. If cooking in a cooker, cook for 1 whistle. Later remove the cooker from the hot burner to stop cooking further.
15. When the pressure releases naturally, open the lid. Gently fluff with a pork

For the rest of you, pull up a chair, pour yourself a cup of coffee, and let’s get at it! So, you write a food blog. First off, virtual high five for that (let’s face it, you’re pretty awesome)! But, back to the topic at hand… Sometimes, no matter how much you love what you do, it can be hard to come up with material. Sometimes you just hit the proverbial wall that is writer’s block, where you find yourself staring at your computer for hours and you just got nothing. Not a single idea.
If life has been kinda ho-hum or I’ve just dry for anything interesting to talk about, then it probably makes the most sense to get started by just writing about the recipe. WhIch is kind of a “duh” moment because we are talking about food blogs. But even though it’s so simple, it can be surprisingly hard. It’s like I sit down, get the recipe in there, have the pictures in place. Now, uh, what do I have to say? Yum. The End.

CHEESY BEEF QUESADILLAS
I have yet to meet a combination of ground beef and cheese that doesn’t make the people I live with extremely happy.  They are not unusual in that respect, I know, which is why tucked amidst the salad recipes and salmon dishes, I continue to pepper this blog with dishes such as One-Skillet Cheesy Beef and Macaroni and Grilled Cheeseburgers with Herb Sauce.  Really, let’s hear it for ground beef.  And cheese.  And Cheesy Ground Beef Quesadillas.
Only in this case the candy is ground beef and cheese.
And here, tortillas!  But look, also spinach or kale!  A leafy green can help validate/justify a lot of cheese, says me.  A great way to elevate a beef quesadilla.
This is a perfect answer to the perennial “what to do with that ground beef” question.  You can use ground pork or ground turkey instead of ground beef, if you like, as well.

 DEAR SPAGHETTI AND MEATBALLS
Good pasta will have a chewy texture that has a bounce to it when chewed. These are qualities that you cannot determine until the pasta has been cooked but if the pasta wants to stick in a clump after being cooked or has too soft a texture when chewed, you will want to try a different brand of pasta in the future.
Spaghetti are eaten with many sauces, from the classic ragù to carbonara to fish sauces. They are cooked in boiling water from 8 to 14 minutes (depending on the thickness), then drained and topped with the chosen sauce.

KOREAN CORN DOG
Korean hot dogs are a popular street food from Korea. Hot dogs are coated in batter and deep fried. They are then lightly coated in sugar before finished with condiments of your choice. The sweet and salty combination works surprisingly well. There are also several variations, including a mozzarella dog only filled with cheese (this one is especially popular on social media), and ones that are coated in potatoes or ramen noodles.
Korean corndog is a unique twist on a hot dog prepared by coating a sausage in corn dog batter, dipping it into french fries, then deep-frying the whole thing in oil. The dish is presented skewered on a stick and it is usually consumed on the go.
Hot dog vendors sell them throughout Korea, and there are a few variations, so they can also be wrapped in bacon, mashed potatoes, or seaweed, while tomato ketchup is typically used as the main condiment.

Ratatouille – we probably all know the famous movie, but have you tried making it at home? Ratatouille is made with thinly-sliced tomatoes, zucchini and eggplant layered into a casserole dish. The vegetables are topped with an aromatic tomato sauce, then baked until the vegetables are tender. It’s super easy to make and one of the most aromatic and delicious dishes ever! I’ve partnered with Pompian to share my smoky and creamy version of this classic French dish! 1
This vegetarian recipe is great as a side dish, too! Try it along with meaty recipes, such as my ‘Grilled Chimichurri Chicken’ or ‘Lemon Herb Salmon’.
There are a few keys steps to follow to make sure your dish is the best!
Make sure to use the freshest ingredients. I love to use locally grown heirloom tomatoes, sweet yellow zucchini and green squash; and Chinese eggplant, which is more mild in flavor.
Slice all vegetables the same thickness! This is super important so everything bakes evenly. Use an extra-sharp knife or madeline slicer to get the best results.
Be patient! Let the dish bake away while you build up an appetite. Then, let it cool for at least 15 minutes before digging in to enjoy.
I love to enjoy my smoky ratatouille with warm French baguette – it’s perfect for mopping up all that amazing sauce!

Peanut butter and bananas is such a classic combination that always tastes good. 
First, chocolate peanut butter. Automatically a leg up on regular peanut butter. You could also use Nutella. Second, rather than just making sandwiches, I made French toast. The bread is slightly crisp on the exterior, soft in the interior, and heating the chocolate peanut butter so it melts slightly is the best idea I’ve had in awhile.

 CHEESY CAULIFLOWER MUSHROOM STEAKS
This cauliflower steak recipe is served with a rich, creamy mushroom and cheese sauce.   A hearty low carb main dish for vegetarians and cauliflower lovers.
If you are a meat eater, don’t run away from this cauliflower steak recipe!   The delicious mushroom sauce would be divine with a steak or chicken. It’s such an easy sauce to make too and can be ready in under 15 minutes.
Used gorgonzola cheese for this cauliflower steak sauce as I wanted a strong cheese to go with the mushrooms and much to my delight it was on special offer at the supermarket that week.  That may have been my real influence, but I’m sticking to the strong cheese story!   Any other blue cheese would work just as well with this sauce.  
Sour cream was used for the sauce as it has a creamy texture when heated.  If you wanted to use another cream, I would recommend another thick one.  I haven’t tried it, but can’t see why not it would not work.  Add extra cheese for more creaminess perhaps.

Keto Classic Chicken Pot Pie
With a buttery crust and a creamy and savory filling, everyone in the family will be asking for this one-skillet chicken pot pie. This recipe is beyond simple. With the help of one skillet, frozen veggies, and a rotisserie chicken I have cut the time for preparation in HALF. Plus fewer dirty dishes for the parents to wash, which is an even bigger win! And what’s even better – it comes in at only 5 Net Carbs per serving!

INGREDIENTS
Filling:
3 tablespoons Grass-Fed Butter
1 Chopped Onion
1 Tablespoon minced garlic
3 chopped Celery Stalks
1 cup Organic Chicken Stock
1 10 oz bag frozen peas and carrots
1 teaspoon thyme
1 tablespoon parsley
1 teaspoon salt
1 teaspoon pepper
1 cup heavy whipping cream
2 1/2 cups diced rotisserie chicken
1 cup shredded sharp white cheddar
Crust:
2 cups mozzarella cheese
2 tablespoons cream cheese
1/2 cup almond flour
1/4 cup coconut flour
1 egg
1 teaspoon parsley
1 teaspoon Italian seasoning
1 tablespoon melted butter
DIRECTIONS
1. Preheat oven to 375 degrees
2. In a large cast-iron skillet, add butter, onions, garlic, and celery. Sautee until onions have caramelized.
3. Pour chicken broth into skillet and let simmer for 15 mins.
4. Add parsley, thyme, salt, pepper, and bag of frozen vegetables, then gently stir. This will simmer for 5 minutes.
5. On low heat slowly add in heavy whipping cream and stir.
6. Toss in diced chicken and shredded cheese. Stir all together and let simmer for 10 minutes to get the filling to thicken.
7. While the filling is simmering, you can quickly make the buttery crust.  In a microwave-safe bowl, melt together mozzarella cheese and cream cheese.
8. Add the remaining ingredients (EXCEPT for the melted butter) to the melted cheeses and mix together.
9. Roll out dough large enough to cover cast-iron skillet and place over the top of your filling.  Cut a few slices in the middle to allow air to escape while baking.
10. Place in the oven for 15 minutes or until crust is golden brown.  Remove from oven and brush with melted butter.
11. Serve and Enjoy!

To help you squeeze the most out of every dollar, meal, and ingredient that you can, here are some of the top meal prep tips from long-term keto dieters:
1.   Make batch cooking a part of your weekly schedule.
The two most common approaches to batch cooking are (1) having a meal prep day every week and (2) doubling or tripling the recipes each time you cook.
The first option requires some planning ahead and a good chunk of time dictated to making multiple recipes at once.
If you simply can’t carve out an afternoon or morning for meal prep each week, then the second batch cooking approach will be much easier to implement. Just make sure you know what you will make before you go to the grocery store, so you know how much of each ingredient you need to get.
2.   Batch cook recipes that call for similar ingredients.
One simple way to cut down on food spending and waste is by batch cooking recipes with ingredient crossover. This will also help you capitalize on bulk buying deals at the store and reduce the amount of prep time needed for each recipe.
3.   Keep it airtight.
Your freezer meals can easily be damaged when the cold air is allowed to come in direct contact with the food. This can steal the tenderness and flavor away for your favorite keto recipes.
To keep this from happening, I recommend buying airtight containers, freezer bags, or a vacuum sealer. If you plan on cooking some meals to store in your freezer for several months, then vacuum sealing will be the best option.
Regardless of what storage option you choose, make sure you allow the meal to cool down to room temperature before freezing.
4.   Label and date your freezer meals.
When the meals start piling up in your freezer, you may find yourself forgetting what’s what and how long each meal has been there. To help you estimate your expiration dates, here is a quick list of how long different keto meals last in the freezer:

Savory Caramelized Onion n' Jalapeno Cheese Dip - KETO!! ​http://bit.ly/2EvAIFZ Time / Carb InfoPrepping Time 5MCoking time 20MTotal Time 25MNet Carb/Serv ~3-5gServings 2-3​Ingredients1 Cup Diced Onion (about 1/4 of a large onion)2 tbsp Olive Oil2 tbsp Butter1/8 tsp Sprinkle of Salt2 Garlic Cloves1 Jalapeno8oz Block Cheese (we used Medium Cheddar)2/3 Cup Half & HalfPork Rinds (optional)​Directions Full step by step pictures recipe @ https://lowcarbingasian.com/caramelized-onion-n-jalapeno-cheese-dip​1) Gather all the ingredients.2) Finely dice onions. You should end up with around 1 cup of loosely chopped onions. Note - if you have a food processor, use it on this step.3) In a medium Teflon fry pan, add olive oil and bring to heat. Once heated, add chopped onions and cook on medium-low for 30 seconds.4) After 30 seconds has passed, add 1 tbsp butter and lower heat to low. Sprinkle salt and mix together. Cook for 15 minutes to caramelize onions mixing occasionally.5) In the meantime, finely chop garlic and jalapeno, set aside. Note - if you have a food processor, you can use it on this step.6) Grate the block of cheese with a grater and set aside.7) Place stovetop pot on low heat and add 1 tbsp of butter. Wait for butter to melt and add half and half. Keep on low heat for about 2 minutes until half and half is warm. Note - it is VERY important to do this on LOW HEAT, otherwise you will burn the cheese and get clumpy dip.8) Low to simmer, add grated cheese and mix well until melted. Keep on simmer.9) After 15 minutes has passed for the caramelized onions, combine garlic and jalapeno into a medium Teflon fry pan. Stir well and cook for 5 more minutes.10) After 5 minutes, combine caramelized garlic onion jalapeno with melted cheese and transfer to serving bowl.11) Serve with optional pork rinds or vegetables of your choice. Once the dip starts to cool down, it will become slightly grainy so warm back up as needed. Note - store in fridge and place into microwave for about 30-60 seconds to melt cheese.​

Fry them till they are soft. Add a cup of dry oats and fry for about one to two minutes, sprinkle some salt and pepper, and let it cook. Garnish with grated coconut, coriander leaves, and lemon wedges.
3. Oats Uttapam: If you use rolled oats, powder them. Make the batter just how you would make a Sooji or a rice flour batter for an Uttapam. Add some butter on a greased Tawa, and then pour the batter. Top with veggies, gently press them. Cook until the base is done well. Flip and cook well on the other side as well. Serve with any chutney- either coconut or mint.
4. Oats pancake: Mix a cup of oats with warm milk, some wheat flour (adjust to get a paste-like consistency), brown sugar, baking powder (a teaspoon), cinnamon, and a pinch of salt. Heat two teaspoons of butter on a griddle or skillet over medium heat; pour about 1/3 cup batter and then spread gently. Flip when the base is cooked. You can serve it with honey and fresh fruits.

1. Oats khichdi: A healthy mix of vegetables, oats, and moong dal. First, soak the dal in the water for about 10-15 minutes as it will get cooked faster. Then heat a pan, add a little amount of ghee or oil. Then add ginger to it and fry until the smell becomes strong. Then add 1 or 1.5 cups of water and then stir it well. Serve it hot. You can have it either with pickle or with curd or any chutney.
2. Oats and chicken porridge: This recipe makes for the perfect portion of lunch enough to keep unwanted cravings at bay. High on protein, this one is for those looking for both taste and health. The crunch of brown onions, juicy chicken chunks, and lots of spices makes it the ideal savory porridge.

Add these sauteed mushrooms to the oats and cook for a minute or two. Check the salt and pepper and adjust to suit the taste.
3. Yogurt and oats kebab: Here is a good depart from the traditional kebabs. This healthy version is made with cottage cheese, yogurt, almonds, raisins, and oats. The melt-in-your-mouth texture will have you coming back for seconds!
