Tyangra Maacher Chorchori : (Tyangra fish cooked with a medley of vegetables) Tyangra fish can be available in big and small sizes, but when it comes to Tyangra Macher Chorchori then it is always suggested to use small fish on Chorchori to make it yummy and delicious. The delicacy of this recipe is the Vegetables (all should be cut into long and thin pieces). During winter season the variation of vegetables are more, so more delicious the recipe becomes. However during monsoon whatever vegetables are available are more than enough to cook this recipe if the blending of spices are done well with the vegetables. Monsoon tyangra chorchori has a different delicacy altogether. I've used aloo (Potatoes), begoon (brinjal or eggplant), Mulo (baby Raddish), phoolkopi (cauliflower), Onion cut into thin slices, Mustard oil, Nigella seeds/ kalonji (Kalo jeera), garlic paste, finely chopped coriander leaves, green chilies, turmeric powder, red chili powder, cumin powder and salt & sugar to taste. Garnished with coriander leaves. A medley of vegetables, a splutter of kalonji, the fire of chilies, the explosion of flavours of onion and garlic, the generous drizzle of mustard oil is exactly what I yearn for on a rainy afternoon lunch. Mourola Maacher Bati chorchori Aloo ar Peyajkoli diye : This is a typical traditional Bengali cuisine and Mourala fish is a small variety of fish. Its a preparation, wherein the fish is mixed in freshly grinded mustard paste and steamed. This dish goes really well with plain rice. Firstly, the fish has to be cleaned and washed properly. Drained water and marinated it with salt and turmeric powder and kept aside for few minutes. In a bowl, took the marinated fish, finely chopped onions, green chilies mustard paste, garlic paste, kallonji, chopped tomatoes, whole dry red chili, red chilly powder, turmeric powder, coriander powder, salt & sugar to taste and a little lukewarm water. Mixed all the ingredients well. I've used thinly sliced potatoes and chopped Onion Flower Stalks also. Heated a wok. Put 4 tablespoon of mustard oil. Oil is always on the higher side in a chorchori. Pungency of both the mustard oil and mustard seeds paste makes any Bengali style chorchori tastes unique. Added all of the contents of the bowl into the oil. Covered and cooked it till the water dried up. Removed from the fire. Put the contents of the wok into a small Tiffin box and closed the lid tight. Placed the Tiffin box on a large bowl of boiling water, covered and steamed for 15 minutes. Serve hot with luchi, pori, roti or even simple bread slices..
Now alu, being a favourite of all Bengali households, there are innumerous ways of preparing alur torkari. In this curry the skin of the potato is not peeled off on purpose which is an acquired taste for the Bengalis. I am all for using one recipe in multiple ways; and this one works that out for me beautifully. Preparation: • Chop the potatoes • Heat oil in a wok and temper with paanch phoron (or Methi, if you don't have paanch phoron) and dry red chillies • Add potatoes and fry • Mix all the.
