This hearty dish combines tender beef short ribs with creamy white cheddar mashed potatoes, creating a comforting and flavorful meal.
Ingredients: 4 beef short ribs. Salt and pepper to taste. 2 tablespoons olive oil. 1 onion, diced. 2 cloves garlic, minced. 1 cup beef broth. 1/2 cup red wine. 2 sprigs fresh thyme. 4 large potatoes, peeled and diced. 1/2 cup milk. 1/2 cup shredded white cheddar cheese. 2 tablespoons butter. 2 tablespoons brown sugar.
Instructions: Preheat oven to 350F 175C. Season short ribs with salt and pepper. In a Dutch oven, heat olive oil over medium-high heat. Brown short ribs on all sides, then remove from the pot and set aside. In the same pot, saut onion and garlic until softened. Return the short ribs to the pot. Add beef broth, red wine, and thyme sprigs. Cover the pot and transfer to the preheated oven. Braise for 2-3 hours or until the meat is tender and falling off the bone. While the short ribs are cooking, boil the diced potatoes in salted water until tender. Drain and mash the potatoes. In a saucepan, heat milk until warm. Add the milk, shredded white cheddar cheese, butter, and brown sugar to the mashed potatoes. Mix until well combined and creamy. Once the short ribs are done, remove them from the oven and serve with the white cheddar mashed potatoes. Enjoy!
