"Andrew, wake up." Andrew felt a hand on his shoulder and he lashed out as he always did. He found himself rocketing towards consciousness as he heard Neil's pained grunt. Panic lances through him as he realizes what he had hit instead of the intruder and he's glad they compromised when he and Neil had started to sleep in the same bed.

Andrew pulls Neil in closer to protect him even as Neil groans at the sudden jolting movement.

He needs to get-

"I already moved your secret pillow knife Andrew." The intruder says as Andrew's hand grasps at nothing. He has a second one but the intruder is now armed and Neil-

"Erik and the Hans Moretti Sword Box are the only combination of me, another guy, and blades being stabbed at me that I will accept. Now, wake up." The familiar sounding intruder says.

Andrew blinks awake.

Nicky's frowning face is staring down at him.

"I need to borrow the Maserati, or you need to drive me to Abby's house. Right now." Nicky says without a hint of the fear.

Or, at least, not fear of Andrew.

"What's wrong with Smith?" he asks holding out his hand for his pilfered knife as he rubs Neil's side where he had lashed out instinctively.

Nicky looks at him for a long moment before handing the knife back to Andrew, "There's...I just feel like something isn't right. I want to be there with him, I shouldn't have left him there." Nicky says.

Andrew didn't disagree.

FF had been relaxed and at ease, drinking the disgusting smoothie that Kevin had forced on him, and Andrew had noticed a hint of a smile on his friend's face.

Then that fuckface showed up and FF had looked worse than when Andrew had stabbed him. He still remembered the garbage that piece of shit had spewed and Andrew hated knowing things about his friend that his friend hadn't told him.

Hated that his brain could piece moments that made a horrible amount of sense now. FF staring at his car the first time before climbing in, how he had requested that Andrew focus on the road, Nicky looking at all of them exasperated "Smithy was going to walk back", and-

“See, you’re still upset over what that guy did. Why are you clinging to the last name of the guy that did this to you?” Fuckface asks from behind them, “He almost killed mom and you. He did kill our two-“

"Stop."

Andrew makes himself stop thinking about it. It wasn't something FF wanted to talk about.

"The keys are where I always put them." he says because he thinks if he gets out of bed he might go hunt fuckface for sport. The thought of seeing fuckface's well fucking face as he hits him with the Maserati is not a bad one.

"Thank you Andrew. Sorry Neil." Nicky says and Neil waves it off having mostly drifted back to sleep as Andrew had rubbed his back mindlessly.

Nicky leaves without another word. Andrew settled back into bed hand still mindlessly rubbing Neil's back. He closes his eyes. He thinks about how FF had looked at those two kids a few weeks back.

He'd looked like a good older brother.

He holds Neil tight, focuses on the feeling of his even breathing on his neck, and listens to Kevin's snoring to think about a monster consuming Daniel whole.

Sometimes Matt feels like he misses out on things with his friends. It didn't happen that often and he doesn't regret the Thanksgiving he spent with his Mom and Dan. Not a single atom regrets making hand turkeys with Dan or holding Dan and his Mom's bags during their Black Friday spree.

He still felt ice in his stomach when he heard that some of Nathan's men had come for Neil and that FF had gotten hurt. FF hadn't seemed overly bothered by the injury and Matt was looking forward to having the freshman as a roommate once he was fully cleared by Abby.

FF was a good kid and Matt had a hard time disliking someone who so obviously looked up to and liked his best friend. He'd told Dan about the 'Captain Neil' title and the two of them had just about died talking about how sweet they both found it.

Which is why he feels a certain kind of way when he finds out his Skype date with Dan had him miss out on a face that, based on what he heard from an incensed Aaron, was in desperate need of a punch.

"Where's Nicky?" Matt asks.

"He couldn't stop worrying about Smiths, he doesn't have Friday classes so he mentioned something about sticking with Smiths." Aaron explains over his oatmeal and Matt turns his head towards the wall they shared with Neil, Andrew, and Kevin's room as he hears the blender going. Aaron shovels the remainder of his oatmeal into his mouth, "I gotta go. I'll see you later." he says.

Matt waves his roommate off and wonders what the sudden rush was but it was hardly three minutes later that Kevin Day was bursting into their room without knocking. "Aaron, I need your-" Kevin stops gaze settling on Matt. "Where's Aaron?" he asks.

Matt looks at him, "He just left." he says. Kevin looks to the ceiling in obvious frustration, "Anything I can help with?" Matt asks while at the same time cursing himself for asking.

"Have you had breakfast?" Kevin asks immediately.

"Uh...no?" Matt says.

"Perfect. Drink this." Kevin says shoving a smoothie into Matt's hand. Matt looked at the blue-ish smoothie in his hands and then back up to Kevin. "You asked if there was anything you could help with. Tell me how that tastes." he points at the beverage and Matt recognizes the distinct smell of one of Kevin's health shakes.

"I don't want to do this." Matt says setting the smoothie to the side.

"I'm trying to improve the flavor." Kevin says, "It was brought to my attention that it isn't very...good tasting." Kevin adds sounding like the admission costs him something.

"Just now? You just figured out they taste like butt, just now?" Matt asks incredulously.

Kevin flushes, "Smiths drank it without complaint!" he exclaims.

"Yeah, 'cuz Smithster is nice! Also I think his face is just stuck like that." Matt says.

"There was no way I could have known they were gross!" Kevin argues.

"Kevin, most people TASTE the things they're giving to others." Matt points out and Kevin only grows redder.

"Are you going to help me improve the taste or not?!" Kevin demands pointing at the smoothie, "that's phase one right there." he points at the beverage.

Matt considers it, "This is to make these god awful smoothies taste better for Smithster?" he asks finally feeling like there was something he could offer his friend.

"Yes." Kevin says.

"And you can't just taste them yourself....because?" Matt asks.

"I need multiple datapoints, it can't just be me." Kevin answers immediately.

Matt rolls his eyes but he was not one to deny the scientific process, "Fine." he agrees and grabs the smoothie, "You said this was phase one of improving the flavor?" he asks.

"Yes." Kevin says.

Matt nods and brings the smoothie to his lips.

Bitter. Slimey. Why is it spicy? So Bitter. It's liquid how is it chalky?

He immediately spits it out, "Why does it taste like that?!" Matt demands immediately. "You said it was phase one?!" he hisses.

"That's the control. I needed your opinion on where I was starting." Kevin jerks his head to the side towards the entrance of Matt's dorm, "C'mon, we've got work to do." he says leaving the room without taking his godforsaken smoothie with him.

Matt looks to the ceiling like Kevin had earlier. Honestly, the world had been a darker place since Kevin had to take the required science course last year.

****** There was no singular more 'freshman' thing that FF had done, in Nicky's opinion, than the fact that the kid had early Friday classes. Nicky had gotten to Abby's place late and hadn't slept before, too caught up in a conversation with Aaron.

FF had been awake when he'd gotten to Abby's, staring blankly into the fridge and based on how cold his friend's pajamas were he couldn't help but wonder how long FF had been there. So he herded FF back to bed and FF had pressed his face into Nicky's shoulder and hadn't let go. So Nicky had crawled into bed after FF had nodded his consent.

Nicky had slept terribly.

Still, he woke up with FF's alarm. FF's gaze was about a thousand miles away but he got ready for his two early Friday classes robotically. Nicky shot a text to Aaron and Andrew to let them know that he'd stick with FF for the day to make sure that if Daniel showed up he wouldn't bother FF.

FF walked into a wall as he was texting. "Aw, bud." he says and sets him on a new course.

Andrew texted to tell him that Neil was going to talk with Wymack about not giving Daniel a chance.

He heard another thud, "Oh, Smith don't run into that." he hears Abby say worriedly.

Nicky puts his phone away.

Focus.

He gets FF through breakfast and through the walk to campus. He takes a seat next to FF in his Math class and ignores the narrowed eyes of the person who's usual seat he has obviously taken. He turns in FF's homework, pays attention, takes some notes, answers the clicker questions for FF, and guides him out and over towards his next class.

He sees Daniel being shown around campus by Jack.

He texts Aaron for back-up. The two of them manhandle FF across campus just in time for his Japanese class and Nicky and Aaron swear up and down that they are just there to look in on the class. Nicky hands the clicker off to Aaron since the future doctor's handwriting left a lot to be desired.

Eventually it was done and Nicky and Aaron had to maneuver FF through a truly STARTLING amount of people who wanted to 'have a word' with FF. Nicky remembers that kid from months back. 'The Adonis of the Foreign Language Department'

Eventually through a combination of Nicky's polite declinations, Aaron glowering, and FF walking into another wall they managed to escape the Foreign Language department of Palmetto State University.

"I think we deserve a treat." Nicky says, "Everyone who agrees raise your hand." he adds and raises his own hand before lifting FF's hand up and looking to see Aaron lift his own hand up.

"Are we sure he's okay in there?" Aaron asks waving a hand in front of FF's face as they made their way to an ice cream shop that had excellent waffle cones and was the place that sold FF's favorite triple berry milkshake.

"Yeah, this happens sometimes." Nicky says even if it had never gone on this long with FF having to reboot his system. It feels like his friend may have blue-screened but Nicky's willing to wait it out.

"If you're sure." Aaron says expression giving away how unconvinced he is but he moves along, "Did you do what we talked about last night?" he asks.

"Yeup." Nicky says popping the 'p' at the end.

"Good." Aaron says as he opens the door to the ice cream shop.

****** Andrew is walking to Abby's with Neil, Kevin, and Matt to pick up his car. Nicky had texted Andrew that he and Aaron were hanging out at Abby's trying to get FF to snap out of whatever daze he had fallen into.

"We have to let him tryout and there will be someone from the university there making sure it's all fair." Neil spits the word out with obvious disgust. "Like any of this shit is fair!" Neil kicks a pebble on the sidewalk.

Andrew keeps his thoughts to himself that if Daniel just doesn't make it to the tryouts then there's no issue. This whole mess kicked off because he stabbed FF and Andrew wanted to make it right. FF may not blame Andrew and may still reflexively tell anyone who asks that Romero did it, but Andrew can't forget the moment he looked over and saw his knife in FF's stomach and realized that the blood on his hands was his friend's.

"He might be a good addition to the team." Kevin says.

"Kevin, if you say that one more time I'm going to dump phase 3 down your throat." Matt hisses.

Kevin recoils in visible disgust and notably keeps his mouth shut. Andrew will have to get the recipe off of Matt if it's that effective at shutting Kevin up.

They make the final turn onto Abby's street and Andrew's eyes narrow as he looks at Abby's driveway where there was only one car.

"Where the fuck is my car?" he asks.

Beidou has a large lightning scar over her left eye from her battle with Haishan.

They see Yaoyao as their daughter.

Beidou and Ganyu are actually best friends in canon! Beidou's "About Ganyu" line says that the two of them "get on like a house on fire", they just don't talk about it much due to their reputations.

They hang out with Thoma whenever they're in Inazuma. They're best buds! Beidou brings him souvenirs from Dornman Port to remind him of Mondstadt.

Beidou and Ningguang exchange letters via Beidou's Red Vulture (yes, she tamed one). The vulture, Xun, is a regular sight in the skies of Liyue due to the amount of time Beidou's at sea.

She has a Devon Rex named Yijun. She reminds Beidou of Ningguang due to her affectionate personality (which is reserved for beidou only). Yijun only really lets Beidou and Yaoyao near her.

EXTREMELY built. Buff Beidou real.

This is already canon, but short people aren't allowed to drink on the Alcor. Sorry Kazuha.

She wears braces on her arms.

Both legs were amputated at the knee due to sailing accidents and battles. She wears those thigh high boots to disguise it.

Beidou and Ganyu are actually best friends in canon! Ganyu's "About Beidou" line says that she gets super angry when people talk crap about Beidou and has to restrain herself from snapping. They just don't talk about it much due to their reputations.

Narcoleptic 100%. She falls asleep in meetings all the time, but Keqing takes excessive notes to keep her updated on what she missed.

Qiqi gives them herbs whenever she sees them. All she knows is that Ganyu likes them, and Qiqi wants people to be happy.

Today(Sunday) is the day in which I get the dumbest fucking teammates in DbD history. How any of these people are Red Ranks I got no clue. You gotta pip up to ascend in rank and if you’re barely getting 10K points every match, how you getting shit done?

Bill, ffs, you haven’t been Hooked or even Injured all match and you see the Killer tunneling me the moment I’m pulled off the Hook! Be a team player and take some agro! I’d already gotten hit with Borrowed Time active and obviously needed to heal up.

Then I got a slugging Michael who was so bad even as a Rank 1, that he needed NO-ED to get a down in the endgame. We wasted every one of his Tier 3s and lost him so many times. And then he slugged everyone and stood in the middle nodding his head like he’s good at the game. He got less than 8K pts and was 15K pts below the Survivor who had the least points.

Got a slugging Wraith who had Franklin’s Demise. My bright green and purple Feng Min managed to lose him in a Chase and I went back to where he made me drop my Med-Kit and then went to help the others up. I Healed myself while Jake(who had Deliverance and managed to get himself off his Hook) is looping the Killer at the shack. I then had to tap the other 2 to get them up. At the same time the last guy gets up, Jake pallet stuns the Killer and then Blinds him with an event Flashlight, and the Killer rage-quit. He’d been playing like a dick up until that moment, but couldn’t handle a stun and blind combo? 

So I was doing a Breakout Build and ended up on Midwich. Dwight got downed on the first floor and I was on the second floor right above him. He had Aftercare and as I’d Rescued and Healed him earlier, we could see each other’s auras perfectly. So I followed him and the Killer from above and Jake took a Hit down below and then I could hear a Hook break which was Jake as well, which gave Dwight enough time to wiggle off! I can only imagine how that must have seemed to the Killer who downed him mere meters away and got in only one Hit. Turns out Dwight had Boil Over as well, so the time to wiggle was shortened and the wiggling was incredibly difficult too! XD

Bought Plague! She’s much harder to play than Spirit. Why do people say Spirit is the hardest to play when she really isn’t?

So I got downed while trying to pull a Kate off a Hook, and I crawled so far under the Hook the Killer couldn’t grab me so she’d walk to the other side and I’d crawl to the opposite while Recovering, and we did this like ten times before she got annoyed when she realized time was wasting and a Gen popped, leaving only 1 Gen left. So it seemed like 2 ppl were down and out right now so it was safe to leave. She walked away to go puke on someone, and I used Unbreakable to get up and then get Kate off the Hook! It was beautiful! Those last 2 dudes got the last Gen too.

Played all Spirit today(Monday) because I had a craving for good game-play after sucking at Plague yesterday.

Got some great 4Ks!

All maps today were MacMillan Estate maps somehow. And then one Autohaven map.

My last match of the night was a weird one. They were a tough group and good at looping, but I eventually got to kill off Jane. Now there was a Legacy Dwight in the lobby and he had a Flashlight. I got blinded so many times and it was annoying, but also funny. I Hook Meg, she gets Rescued immediately, and I go back to get the person who saved her. It’s Dwight! And he’s sandbagging her! He’s running ahead of her just enough to make it so she can’t use pallets or get around loops. I don’t tunnel the person just on the Hook so it was especially annoying for me while trying to get him, because he was using her as a shield. Meg didn’t have Decisive Strike either btw. So Meg and Claudette seem to conspire together and sandbag Dwight in return, cornering him against a wall while I was coming from the only other free direction, and I made sure to only hit him. They both teabagged him while I nodded madly. He was on death Hook and I had Meg and Claudette finish the Gens and point-farm to make up for Dwight wasting everyone’s time and being a douche.

Got a match against a Rank 2 Leatherface today(Tuesday) and I ran his ass around so good while playing Bill! We’re on the last Gen which is 3/4 of the way done, and the Hatch has spawned right beside the Gen in full view so we all know where it is. There’s only Jane and I left. I finally get downed for the first time and get Hooked. She saves me and I use her Borrowed Time to lead the Killer away so she can do that Gen. He must have cottoned on when we ended up in the far corner because he downed me and then ran all the way back. But I had Unbreakable and got myself up, Healed up, and then proceeded to fast-vault a pallet to draw his attention. Didn’t work. So I went back and he got Jane down and I saved her with my Borrowed Time and she led him to that same corner except she was on Death Hook, so he took the chance to Hook her on the other side of the map, thinking he’d make it to the Hatch in time. I was standing over the Hatch and he got in one swing before it opened, and I then Escaped!

Cross-Play can be enabled and disabled in your Options menu. Whining because you don’t want to play with people from other consoles or some shit, is stupid. YOU have chosen not to disable the experience so YOU agreed to go through with it.

Some Killers are such big babies. They make the choice to tunnel but then complain about the results. By tunneling 1 Survivor the whole match, you’ve decided to let the other 3 do whatever they want. And what they want is to Escape, so they’re going to do Gens since there’s nothing else for them to do in the meantime. You gave them the opportunity and are salty that they used it? So in 4 minutes, all 5 Gens get popped and you still haven’t Hit the Survivor you’ve been tunneling. And then you’re going to attack the person you tunneled by accusing them of being in a ‘tryhard swf fag group’ and claiming they’re too ‘sweaty’ and ‘need to go outside and get a life’. Just cuz you’re bad at micromanaging - and playing the game in general - doesn’t mean we’re sweaty. 3 people on 1 Gen will get that Gen done in like 35 seconds. If anyone had a toolbox it would have been even faster. The fact that it took 3 ppl 4 minutes to do all the Gens means they’re slow af. And the fact that you landed no hits in that time frame means you’re bad. Rank 3 my ass.

Raincity Weightlifting Classic

Details have been finalized and we’re VERY excited for the upcoming event! 

The Rainicty Weightlifting Classic Dec 4th @ 1PM hosted at Raincity Athletics

The Raincity Weightlifting Classic is our in house weightlifting competition during the Raincity Classic (Team Competition) off season!

It’s a great chance for athletes to test their 1rep maxes of the Clean & Jerk and Snatch!

Both the [OLY] Barbell Club and [FF] Group Classes are set to peak their athletes for lifting in this competition! So no additional work is needed - though a few extra PTs or open gym lifting days aren’t a bad idea either ;)

To take the pressure off everyone’s first ‘event’ back (if not doing FFL) we’ve removed the divisions and will leave it open to all athletes! Weigh in’s are required purely to determine ‘best overall lifter’ via Sinclair - but you will NOT be competing in designated weight classes!

The Way To Use Final Dough Temperature To Bake Fantastic Bread

The final dough temperature is the temperature of the dough after mixing. Getting the best final dough temperature (FDT) gives your dough the best start in making fantastic bread. 

After kneading, a temperature reading of the dough should be taken, this is the Final Dough Temperature (FDT). The temperature of 28C (82F) is best for fast doughs, for artisan bread a temperature of 24C (75F) should be achieved. 

To achieve this temperature, readings should be made beforehand of the flour and room temperature. Using a formula, the desired water temperature is calculated. To change the final dough temperature the water is cooled or heated. 

In extreme heat, the other ingredients can be cooled in the fridge.

Why is warm or cold dough a problem?

If the final dough temperature is low the alcoholic fermentation of the yeast slows down. The dough will take a long time to warm up to ferment or proof. Oxygenation of the flour can become too excessive during this time. This means the dough can be substandard and take a long time to be ready for the oven.

If the dough temperature is too high, it becomes too active. Speeding up the bulk fermentation and final proof time, often before the gluten structure is properly developed. A lack of dough maturity creates issues in gas retention and diminishes flavour.

Is final dough temperature and the bread proofing temperature the same?

Bread proofing temperature is the temperature the dough proofs or bulk ferments in. The final dough temperature is the temperature of the dough after mixing. Both are related to each other, for example, if it is really warm we can decrease the final dough temperature to slow down the rate of fermentation after mixing. Generally, we don’t do this.

We try to achieve the desired dough temperature at the end of mixing and look to create the best dough proofing temperature for that stage.

Maintaining both the final dough temperature and the proofing temperature to be consistent throughout bakes leads to a consistent product ready to be baked at the right time.

Essential tools for the perfect bread proofing temperature

A thermometer is essential for taking readings when baking bread. Thermometers that read surface temperature can be used. These are slightly less messy but I prefer the ones that can be poked in to get the core dough temperature.

I usually use one that you can poke right into the centre of the dough for an accurate reading. A thermometer with quick read functionality is a good idea so you are not waiting for the reading for ages.

A decent tub for bulk fermentation is also recommended. One big enough with a sealed lid, and strong enough to withstand plenty of use. I have just bought this tub and it’s working a treat!

 How to get the final dough temperature right

To achieve the ideal bread proofing temperature we use a formula which includes the temperatures of the ingredients and the room. The easiest of these temperatures that we can change is the water. So we take the temperature of the other ingredients and adjust the water temperature to fit the formula. 

There are a few different formulas here that can be used to achieve the optimum final dough temperature. Some are more accurate but more time consuming, I recommend the common formula.

If the area you are proofing in is extremely hot or cold, you might choose to increase or decrease the final dough temperature slightly to help compensate. This should be done before baking - and your temperature readings are enacted.

We aim for the standard 24C(75F) for slow proof and 28C (82F) for fast proofed bread.

Final dough temperature formulas

Key for the formulas:

WT = Ideal Water Temperature

FDT =Final Dough Temperature

RT = Room Temperature 

FT = Flour Temperature

Basic formula for working out the desired water temperature

This basic way to work out the water temperature is the one I used for years. It is not as accurate as the following examples, though it does give a simple temperature that I can work out in my head.

(RT + FT) - FDT = WT

For example:

RT = 21C

FT = 18C

FDT = 28C

(21 + 18 = 39) - 28 = 11C

Simple and effective, though it doesn’t take into consideration how the dough warms up during mixing.

An introduction of the friction factor

When kneading, the friction factor should be taken into consideration. This is the friction created during the action of kneading. Friction will raise the final dough temperature.

When kneading by hand, the friction factor comes into play with higher influence. Warmth from the hands transfers to the dough. Hand kneading warms the dough more than machine kneading. 

FF = Friction Factor

Without extensive testing of your mixing, the friction factor is not known, so we have to make an assumption. The factor will increase or decrease depending on how long and at what intensity the dough is mixed. 

For a light mix used in a no knead bread, it will be 0C (32F). For a standard mix 4C(40F) and for a long mix around 7C (44F). 

After a few trials, you can rearrange the formula shown below to discover the amount of friction factor created.

Standard formula for working out the water temperature of the dough

By taking readings from the flour and the room. Including the friction factor of the dough mixer and knowing the final dough temperature we want to achieve we use this formula to get the ideal water temperature:

WT = (3 x FDT) - RT - FT - FF

The 240 Factor method for measuring dough temperature

The 240 factor is commonly used in the US, where readings are taken in Fahrenheit. It works using the same formula as the previous when aiming for a desired final dough temperature of 80F:

WT = (3 x 80 = 240) - RT - FT - FF

The 240 factor simplified looks like this:

WT = 240 - RT - FT - FF

So it’s a little simpler.

Finding the friction factor 

If you want to work out the friction factor of your dough kneading process, you can rearrange the equation to generate this figure.

Ff = (3 x FT) - RT - RT - WT

Water temperature when using a preferement

If using a sourdough starter or other preferment, follow this formula to work out the correct water temperature. This allows for the preferment temperature to be taken into account when finding the desired final dough temperature. 

PT = Preferment Temperature

WT = (4 x FDT) - RT - FT - FF - PF

As you can see we now multiply the final dough temperature by 4, before taking away the preferment temperature as well as the other known readings.

How can I best get cool water for bread making?

The best place to start is the cold tap which in cooler weather can be fine. To drop the temperature further I often fill a jug of water and place it in the fridge. This dramatically cools the temperature, to 3C (37F) if left overnight.

Add ice!

If you are in a very warm climate you are going to need to get cooler. Add some ice to water and allow the temperature to drop to 0C (32F).

Be careful to not pour any ice cubes into the mixing bowl as this might break the mixer!

Managing final dough temperature when hand kneading

When hand kneading, the dough gets considerably warm, even when using ice-cold water. For this reason, when hand kneading for long periods it is a good idea to use a technique that transfers the minimum amount of heat from your hands into the dough. 

Hand kneaders can also make use of autolyse to develop flour fermentation naturally. I often use the fridge in between slow and fast kneading to cool the dough whilst naturally fermenting. Kneading the dough for a bit and then placing it in the fridge to cool for a bit helps manage the dough temperature.

Using the base temperature

Another formula for calculating the water temperature uses the base temperature (BT). The base temperature is given with many advanced bread recipes.

The base temperature changes between recipes for example for bread that we wish to cool proof it is lower than fast proofing dough. It also takes into account the expected friction factor produced from mixing.

The base temperature is usually between 55-60C (130-140F). 

The formula for working out the water temperature is slightly easier to work out:

BT = Base Temperature

(FT + RT) - BT = WT

If you do not have the base temperature as part of the recipe, use 55C.

How to work out the dough temperature without a formula

Simply take a FDT reading after the first mix of the day. If it reads too high, the water temperature is dropped for subsequent doughs. Of course if it’s too cool you can raise the water temperature with warmer water. 

If baking in the same environment each day you soon learn how much change is needed. If a dough method requires a longer mixing time, again the water temperature can be lowered.

What should I do if I forget to take a temperature reading?

Do not sweat, this happens all the time. Whilst you are not going to get a reading as accurate as you would normally, we can get a good estimate. 

If it is just one reading that you are missing can you guess it? For instance, fill up another jug of water and test that, or probe another bag of flour? Then continue with the formula.

If you have forgotten to take any readings and realise midway through mixing, take a reading as soon as possible of the dough. You know the final dough temperature of the dough is going to be a little warmer due to the friction factor.

Taking a reading will allow you to prepare the temperature for bulk fermentation. Creating a warm or cool environment to get the best bread proofing temperature possible.
