twice now in the past week i have successfully staved off the desire to order chinese by way of this simple cabbage recipe which embodies most of the things i am usually seeking in terms of flavor and vibe from the chinese restaurant (esp when paired with freezer dumplings or buns i can toss in the steamer but also i have just done chx strips on rice with it) and now i recommend it to you all

Inherited a jar of tea from my Pakistani mentor yk the kind that is round and in a repurposed glass jar. Every night for a week I tried to make massala tea but I keep messing up the proportions. Any advice please? I just want the flavor of the spices to show up but right now it is really is just leaf water 😔
i have an entire masala chai recipe on my old main blog i will try to scout for you but the basic proportions for masala chai are
- equal portions water + milk (preferably whole or evaporated milk. any milk alternative is fine but the texture won’t be as smooth, and you will want to add less water and more milk)
- per one cup of liquid, 1 tsp of crushed whole spice or other mixed chai spice. i prefer my chai very strong so i usually add about a table spoon.
- sugar is to taste.
i make my chai by melting my sugar down first with an equal amount of water and adding my spices, letting it boil into a syrup until it’s a soft amber color. this isn’t traditional but it results in a very strong tasting chai.
after the sugar i add the loose leaf tea proportion to chai (i do a tablespoon per cup of liquid. this might be too strong, so a teaspoon will do) and the amount of water. i let that come to a simmer, turn the heat down, and add equal amount of milk.
i turn the heat up and let the chai come to a boil and turn the heat down just before it overflows. REPEAT THIS THREE TIMES. aearating your chai is the most important part, as it denatures the milk and makes it that nice smooth texture.
use a tea strainer and enjoy 🤝
