These popsicles are a tasty take on the classic mojito cocktail. They are made with fresh citrus juices, fragrant basil, and a hint of rum.
Ingredients: 2 cups fresh citrus juice lemon, lime, orange mix. 1/4 cup fresh basil leaves, chopped. 1/4 cup granulated sugar. 1/4 cup water. 1/4 cup white rum optional. 1/4 cup club soda.
Instructions: Put sugar, water, and chopped basil in a small saucepan. Stir it every so often while heating over medium-low heat until the sugar melts. Take it off the heat and let it cool down. Put orange juice, white rum if you're using it, and club soda in a bowl. Pour the basil syrup that has been cooled through a fine mesh strainer into the citrus mix. Throw away the basil leaves. Mix it up well, then pour it into popsicle molds. After letting them freeze for about 30 minutes, put a popsicle stick into each mold. Keep freezing it until it's solid, preferably overnight.
